  3. Yes, the elimination diet IS scientific! I eat gluten, I feel like crap. I do not eat gluten, I feel great.   6. Quinoa is a grain--I make it in a soup a bit like barley soup (except with quinoa, not barley). You can find it at health food stores. You have to wash it really well in a sieve under water to get the film off or it can give you a stomach ache. Some people with celiac can't digest it well, but for me, I eat it just about everyday to stay regular.

  14. I live overseas in a place where they do not have the capability to test for celiac. I am new to this too--I felt like I was dying and was in the hospital for three weeks. It was terrible.   15. Yes, polenta is another word for fine cornmeal. I think tapioca flour would sub for the polenta if you didn't want to use corn. I like that little bit of cornmeal in the dough because the texture it gives reminds me of what a wheat pizza tastes like when you dust your pizza pan with cornmeal--that's what it reminds me of.
