  1. my very skinny son did not gain weight when we were gluten free for a year and half...but once I also eliminated high oxalate foods he has been gaining weight, and height like crazy. Oxalates are plant chemicals in things like buckwheat, spinach, rhubbarb, qunioa...that can get through a leaky gut (for us caused by celiac) and wreak havok in the body. I...
  2. corn derivatives do it to me!
  3. Our son was always tall but SKINNY....3 months gluten-free, with low oxalates (that combo seems the magic gut healing combo here) he has gained 10 lbs, gone from size 10 to size 14 jeans, and grown about 1 1/2 inches and he is a wee bit pudgy and not skinny as a rail.
  4. Agreed, I would really appreciate learning from your research!
  5. I know kids, and adults, can spend some time detoxing various foods out of their system. I have heard and read that gluten can take six weeks to be mostly gone. Things can be rocky for a bit, and it is hard to figure out if it is detox, gluten or something else but it will get better one day at a time:) (I am new to celiac, but not new to dealing with...
  6. Thank you, I am going to get hubby who is stomping around saying no one else misses this much school for celiac, to read it. I can totally understand missing school because you are trying to get the diet right! This week I realized that either coconut, coconut milk or something in the coconut milk is not good for his gut....maybe the high fat content? ...
  7. That is one dissertation I would love to read! Thanks for the information, it makes me feel so much more like this is a part of how celiac takes hold of people and I can deal with it! The examples from your family really help me understand better. I see different reactions in all our family members too, and I have made our house gluten-free (as you said...
  8. ah, another peice of the puzzle...this could explain why we can't handle more than a teeny bit of honey around here....hummmmm thanks, I will keep fructose malabsorption in mind while I plan meals while our guts heal
  9. I found it helpful went we first tried gluten free (part of an elimination diet a few years ago, just diagnosed with celiac this week) to go and take every gluten-free cookbook out of the libary. I have slowly bought cookbooks since then. I found starting with a good gluten-free all purpose flour blend (store bought or homemade) allowed me to make a...
  10. thanks for the encouragement that will time things will improve. I have removed dairy and soy as well as high and medium oxalate foods to let our guts heal (son has diagnosis, I am sure some of the rest of us are to follow). I found we reacted to them, particularly since the gluten challenge were were ate more gluten then we have in years, and all got...
  11. I will remember that! thank you. It is good to hear that your daughter is working past the refusing to go to school phase, I hope my son gets there really soon. Thankfully I work from home and can somewhat deal with it, and he is now better enough that he spends the day reading etc. and no longer lying there watching TV feeling ill.
  12. Thanks...it is a good reminder that the GAPS intro worked for us before and can again! And, now that I know we have trouble with oxalates full gaps may be an option.
  13. I am new to celiac, but not new to diet changes and kids (we are allergic to corn, and avoid artificials). It takes time for kids to adjust, but they do. I have never tried to make all the same things as before, or as there classmates but, i try to make some special things. It is hard because they don't always fully see the links between diet adn health...
  14. Hi, my son was diagnosed celiac yesterday, although we have been totally off gluten for about 6 weeks when the testing was finished. My son was not eating a lot of gluten prior to the testing, we noticed too much gluten set him off, and got very very ill during the gluten challenge that occured right after a bout of pneumonia which may have influenced...
