  1. Celiac diagnosis November 2011. Cancer survivor. Recently implemented a gluten-free kitchen, with the support of my two awesome (and non-celiac) teenagers.   2. I have used gluten-free pretzels, crushed in the food processor, also. I find they work well, though a little salty for my taste (I generally use no salt, just out of preference).   4. LOL - I totally agree with the honorary degrees just based on our celiac knowledge! Goes to show that we have to be fully informed, self-sufficient, and not shy about advocating for ourselves. I started out as a quiet and shy person, never wanting to say anything that might offend ... I am still polite, but have learned that I must be firm and unwavering...
  5. I would be very cautious before accepting that a chiropractor (or anyone) can "cure" celiac disease. Any medical evidence I have seen states that the only effective treatment is a total gluten-free diet. And any variation to that - even when symptoms don't arise - will contribute to long-term damage to the intestinal villi which are required to function...
