    I've never heard of this being done for gluten, but I had a hydrogren breath test for lactose intolerance. Basically, what happens is you drink the solution (it tastes like undisolved Tang - just make him drink it as fast as he can) and then you blow into a bag so they can get a base reading, and you do that every half hour for three hours so they can see...

    PF Changs in the Source Mall has a gluten free menu and it's a good place to go with a big group.

    If you ask nicely, the chefs who do breakfast at the Grand Floridian will make you gluten-free waffles or pancakes . My mom had called see what my options were, and the chef came out and asked me what I wanted for breakfast, and I just said that eggs or something would be fine, since that's what I was used to having at any kind of buffet/diner/breakfast situation...
