  1. Will the muffins from the gluten free mixes or ones made from scratch last for a couple of days without getting dry?
  2. Needing tried and true recipes for either muffins or sweet breads that my mom can take with her on a trip. She will be gone 4 days so am also looking for something that will keep well. Were she is staying is offering a continental breakfast so I am looking for something that she can eat along with fruit. She does not like cereal.
  3. I found a receipe on www.allrecipes.com in the gluten free section for delicious gluten free pancakes that is absolutely the best. I like them better than regular pancakes using wheat flour. I do use buttermilk in place of the buttermilk powdewr and water (1 1/2 buttermilk). You have got to try them!
  4. I used tinyada spagetti noodles and thought they were good. I recently used the macaroni noodle and my Mom did not like them at all. I made macaroni salad with them. I thought they were ok but had only tasted one. I still have some left and am going to try them in macaroni and cheese.
  5. I made the blondies. As suggested on the package I added some nuts, chocolate chips and coconut. Two cups in total. I was very careful at how long I baked them to be sure that I did not get them overdone. THEY WERE VERY VERY GOOD.   6. Has anyone used the Namaste "Blondies" mix? Is is good? Also any hints or suggestions for mixing, baking, storing. I went to the health food store to buy the Namaste Chocolate cake mix and they were sold out. So I bought the blondies mix instead.

  8. On a recent post someone mentioned Chebe rolls. I have looked at their web site and am interested in trying their products But I need the mix ASAP. No one local to me carries them so I will have to drive a distance. Are the products worth the drive?

  10. I am having a co-ed baby shower. My mom who will be attending has celiac. Because it is summer and hot we want to have cold foods but am tired of ham, chicken salad and tuna salad. Looking for ideas that may replace sandwiches. Need foods that are easy to eat off a plate on your lap.

  15. HELP--I am in need of a good receipe for chocolate cake and another one for brownies. I was wondering if I could just use the regular receipe that I use for non celiacs and just substitute the flour for a flour blend.
  16. For those of you who make your own pie crust what flour blend do you use? I thought I had it figured out but am now not sure.

I made two stuffings last year--one was regular stuffing made with regular bread that I stuffed the turkey with and the second was stuffing that I made with gluten free bread that I baked in a baking dish. The gluten free stuffing was just as good tasting but the tecture was a little different. I did not dry the bread first so I will try that this year...

  19. My Mom has had adult onset diabeties for years and was diagnosed with Celiac about 2 yrs ago. She is 85 and lives in a continuous care facility (indepentent living now) and fixes some of her meals but eats out or in the dining hall for a large portion of her meals. Thank you again but another question--My mom was told by the dietician she met with to not eat any candy because often times the manufacture used a gluten product to coat the candy so that it did not stick in the bag. She was also told to watch spices for the same reason. In particuliar I have read spice lablels and see only the spice listed as the ingredient...
