  4. I tried the Helga's Red Quinoa & Sunflower bread today. I liked it. It has the potential to be used untoasted for sandwiches when fresh (if feeling a little stale or dry to the touch, sprinkle a few drops of water on the bread, wrap with paper towel and microwave for 5 seconds), though perhaps isn't quite as soft untoasted as Country Life's multigrain...
  5. Thanks Saz. -- Regarding the Genius bread, I realised that I had been accidently grilling it using the pilot setting. Any bread + low temps = rusks. LOL. I didn't have the problem today when I used the proper setting on the oven.
  6. How are you toasting the Genius bread? I have found that if I defrost the seeded bread in the microwave first then put it under the grill, it gets all dried out like a rusk and is terrible! However, I don't have this problem if I put it in our toaster while frozen and use the defrost mode. Perhaps toasting it from frozen locks in some moisture. I haven...
  7. I tried the Coles Simply range puff pastry the other night. I liked the taste; it didn't really puff up as gluten pastries do but I may have over cooked it. Like all pastry though, it's one of those very occasional treats in my opinion.   8. Get yourself a microwave cookbook! You would be surprised at the amount of dishes that you can cook in a microwave such as stews and 'bakes'. It will likely take more time than regular cooking, but you can cook up a batch and freeze individual portions for later. The only consideration is making sure you have an area in your room where you can do a bit more...
  9. Thanks Saz! I haven't tried the Genius bread yet as it comes frozen, which is silly really as what do I do when I buy my gluten-free bread? Keep out a few slices and freeze the rest! I don't suppose you or any other members know of any gluten-free bread products (any form) which are higher in fibre? I will very likely soon be diagnosed with reactive hypoglycemia...
