Well it's a good thing I didn't mention anything about lobster or watermelon then huh?? You are correct, food intolerances happen when a person eats the trigger food but it can happen if you do not consume that food for a period of time. I am so sorry to hear about your frustrations with your cafeteria at work. It must be very frustrating and from the sounds of it, it seems like it has been such a problem that you have even been lead to tears! I am so sorry! I am going to be honest.. You can't expect people to change. You can't expect your cafeteria to prepare your gluten-free meal...
