Holistic Nutritionist in training specializing in gluten-free alternative and therapeutic diets. I've had diagnosed celiac since 2004 and didn't get better on a traditional gluten-free diet.

Currently recruiting participants for my free educational program as part of my nutrition certification. Must be over 18 (or with parents permission) and gluten-free for less than 2 years (some wiggle room here).   1. You might be reacting to the actual white rice. Lots of people, myself included, react to gluten cross reactors like rice. The paleo mom has some great articles on her website about gluten cross reactors and molecular mimicry (why the body "sees" rice as gluten in some of us).   2. Hang in there! It's such a misconception that you'll feel better instantly after cutting out gluten. It's super important to heal your damaged gut lining, too. I found acupuncture, naps and Epsom salt baths really helpful when I first went gluten-free. My poor body was so overwhelmed!
  3. I've talked to a lot of waiters about this and I think it's always a safe bet to say I have celiac and if they give you a blank stare say "allergy."   4. This sounds like me as a kid! I was diagnosed with celiac when I was 15 (after being sick since I was about 10). I had to cut out dairy, ALL processed gluten free foods, most grains & legumes and other gluten-cross reactors before getting better. I was also treated for SIBO and leaky gut.
