  1. My Menu will be roasted turkey, mashed potatoes and gravy, sweet potatoes, fresh green beans steamed, cranberry relish, and gluten free pantry's cornbread. I'll serve pumpkin martini's and gluten free pumpkin pie made without milk. Some won't like the pie but they can have another martini. I'm hearing a few complains about no stuffing but I don't care, they can make in their own homes on friday. For the most part people love my cooking and they enjoy the company. I've made gluten free stuffing in the past and it just didn't go over well. When you think about it stuffing is a lot of work and just another thing you have to put in the oven. I'm relieved I have an excuse not to make it. :)

  2. I'm wondering if there is a martini or after dinner drink that tastes like pumpkin pie? Any helpful hints appreciated, by the time I make a pie it's so costly and I only get one slice it all goes to down the bellies of people who didn't need it gluten free ....and do we really need to eat more?? I think we just need the flavor of a pumpkin pie as a nice after dinner drink. Thanks

  3. I won't, never have and never will. I haven't even had a cold since I was diagnosed and see no need for it. My answer would likely be different before I was diagnosed since my immune system was so busy fighting gluten that I caught every bug there was then and was constantly sick with something. Now that gluten is not an issue my immune system seems to do a very good job of fighting off any bugs that are around.

    I'm in the won't be getting it crowd. The shot has not been tested good enough as far as I'm concerned.

    I'm also sensitive to all the preservatives they use.

  4. Can you give some ideas about how you diversify your meals? I'm boring myself with my same ol'.

    Its really too soon for me to give any advice since I'll need to doing this longer for me to feel back in a corner

    where I usually quickly become quite creative.

    I cannot eat the same foods over and over again. I do want to feel good and I don't want to struggle with the temptation to cheat so I'll come up with something. I also have the time and the talent to cook. So we'll see.

  5. I would like to hear your experiences good or bad with this diet as compared to just gluten-free/CF/EggFree

    I just started eating paleo again a few days ago. I've done it before to lose weight but I never had to lose alot of weight and wouldn't be on it long. I always feel good on this plan. And again its just been two days and I don't feel bloated, gassy, burpy and brain fog gone. My head is clear which is amazing because I can actually read without rereading everything three times.

    I'm also getting pain in my joints that seems to be getting worse. I'm hoping this will get better. I know my blood pressure is down because I feel so much more relaxed. I'm going to go real light on tomatoes, and most of the night shades. Just every so often if I feel like my choices are getting too limited. I'm going to stay away from fruits that can't grow in my climate.

    Why I feel so good eating this way, probably an overgrowth of bad bacteria. I don't know but carbs were never my friend. I know there are more paleo's on this board. I think the best thing to do is to be creative with your meals instead of resigning to plain meat and plain veggies etc., etc.

  6. For those of you that are soy and gluten intolerant (including Celiac disease) like me, I have a question. Does soy cause you to have reactions as severe as gluten reactions? Or are they just annoying and nowhere near as bad as getting a gluten reaction?

    I have the same problems with soy as Sylvia Ann has. If you take foods high in glutamates like soy and then process it, the glutamates are freed. If your sensitive to MSG (many people are and don't know it) you'll react to soy. Free Glutamates causes neurons or receptor cells to fire sometimes to the point of death. We have alot of these cells lining our digestive tract, along our heart, and across the brain or BBB.

    Processed soy will in turn give me headaches, stomach distress and at night I'll wake up because my heart is beating like crazy in my chest. Then insomnia will follow. Not fun.

My wife has been having the following symptoms for a number of years: bloating, gas, severe stomach pain, cramps, etc...she is lactose intolerant, iron deficient which she has been given iron meds to bring the iron levels to normal. We recently married and fortunately my medical insurance is good and we starting seeing a GI doctor. Last week she underwent a endoscopy and colonoscopy...doctor said her intenstines were fine, and we are waiting for the biopsy results which we should get this week. In the mean time, my wife and I have been via trial and error eliminating dairy foods/products, she eats a lot of high fiber foods, fruits and vegetables, but everything we try seems to aggravate her symptoms, even if she is not eating, she feels the symptoms...we are frustrated and I really want to figure out what she can eat in the mean time while we get the results if she has celiac disease (we feel she does, but need to know for sure).....what kinds of easy to digest food can she eat????

    She is accustomed to eating wheat bread with fiber and sandwhiches to work, and salads, fruits??? I know that gluten is a protein found in grains, but maybe we can eliminate this from her diet, but what can she eat??? Help please!

    does anybody have a recommendation for: breakfast, lunch and dinner and what she can take to work?? Thanks in advance!

Some researchers believe that in gluten intolerant people gluten may be broken down into small peptides that cross the blood brain barrier and interact with receptors intended for endorphins and other endogenous opiates produced by the body. Also most of the problem is just Malabsorption and with that you'll have high levels of adrenocorticotropic hormone (ACTH) and acetylcholine (ACh) often referred to as stress hormones. These high levels of ACTH and ACh interfere with learning and create anxiety, the desire to escape, a fear of new or unfamiliar things, and poor conditioning response.

  9. Has anyone tried corn thins? I ordered them from amazon and gambled that is would taste ok because I couldn't find them in stores anywhere. I'm glad they were good because you get 12 bags.

    If you like something crispy but your watching your weight or like me I'm watching my fats, these are your answer.

    They're sorta like a rice cake but they're thinner. So what I do is put my homemade hummus on it. I was looking for something to substitute pita bread. Something with a more of a bite then a soft slice of bread. And it works well. Like I said its thinner then rice cakes so you can taste your filling on top instead of getting a mouth full of styrofoam.

    zero fat, gluten free, organic, 22 calories a slice.

  10. After trying a whole list of things that didn't really work for me, what has done the trick was something called Travacor. It is a neurotransmitter support combo that happened to have most of the things that I tested low in. Surprisingly it helped after the first day!

    I've tried many things also and found TravaCor to be the best thing that's work so far. It has Taurine, 5 htp (works like typtophan) and Suntheanine (I think this is from green tea that has a calming effect). Then it has all the vit.s to support these three things to make it work better. Those are vir. C, vit. B6, vit.B12, folate, mag., zinc, and selenium.

    It's great and I really hope you give it a try. I only take one in the afternoon and one before bed.

  11. My husband and I are low fat vegans and I'm also gluten free. We have been eating this way since May. We feel so good eating this way. I have more energy then I did when I was a low carb meat eater. I just found it hard to eat meat after about 3 years of eating that way, and wasn't feeling right. I started to figure out I must have a gall bladder problem and started to look into it.

    Another thing I started to worry about is heart disease since I turned 50. I was eating beef or red meat 2 to 3 times a week easily. I was eating cheese because I tolerated it better then milk and thought at the time it was a great calcium source and again low carb.

    I ended up reading at McDougalls website. He's a doctor wrote the book The McDougall program Twelve Days to Dynamic Health. I had the book sitting in my bookself, I bought it about 8 years ago. On his website I learned of two other authors T. Colin Campbell who wrote The China Study, and Caldwell B. Esselstyn who wrote Prevent and Reverse Heart Disease. Two of the best books I've read in a long time. The China Study will blow you away. Cheese is diffenetly out of my diet.

    So I've been on several different types of diets in the last 3 years and this is the one I feel the best on. I don't eat soy eigher so I have very limited protein sources. Mostly beans, rice, Quinoa, amaranth, teff. they're all good protein sources. I'll have a shake with hemp protein every now and then. I really don't think I'm lacking protein at all eating this way.

    I make alot of soups and eat many mexican dishes and italian dishes, I just don't add meat, :) with lots and lots of veggies. Easy to do so far with the farmers market. I don't know if winter will be more challanging.

    Since I started eating this way I sleep better and longer then I ever have. I'm calmer and like I said I have more energy then I ever had.

    I usually google recipes or get recipes from the books I've talked about. There is alot of good web sites and check out McDougalls you'll lov it.

    OMG Carla, It makes sense with all your symptoms. Black mold is serious! Its horrible. Get that out of your house and get professional cleaners and run a air purifier for a week straight before you go into that room.

  13. :( That is a svere allergic reaction, the thing is that you could be eating say blue berries all your life and then one day wham you get an allergic reaction worse an Anaphylctic reaction. If I were you I would get a blood test : write down every thing that you ate that day and the day before ( incase you had a delayed reaction or there was cross cntamination) then write down the names of all the foods you love to eat and go to the food and Anaphylactic website and write down the 8 most commev foods that people are becomming allergic too then add sesame ( that is already included in Europe). Also add mold because that is what I found in my Blue Barries last night. When the Doctor asks you what do you want to be tested for ... voila you have your list also you can be tested for say Tuna, Salmon etc...seperately. I wlk around with an EPI- PEN that is incase I go to Anapylaxis, I also have chewable Benedryl not sure it is gluten-free ( I am looking for the ones that are liquid that comes in a seperate tube? I also have a bronchodialater, that is to open the airways if you have Asthma and you can tolerate black tea drink that it has a natural broncho healant taht is in the inhaler. After using an inhaler rinse your mouth you do not want to wind up with thrush. These blood tests are not reliable food allergies are very seriouse. My Doc. said never mind you got 0 on all the foods we tested you for you still are allergic depending on your symptoms hives. your throat shutting down and a sense of doom discoloration of the face.

    That's interesting about mold because I do avoid anything with mold just because I've been told by a doctor to stay away from it. He did a test on me way back in the 80's. If I'm in a moldy inviroment I'll get extremely tired and weepy. I have to have dehumidiferiers going in the summer. Can't have peanutbutter etc. all those foods but I haven't looked at a list lately of mold containing foods. I've changed up my diet a few months ago and I've included fruits which I never eat except maybe an apple or pear.

    I'm sure that's what it is but I will check into this since my reactions are getting more severe. Thanks for info on the website. Gosh its scary to think it might come down to carrying a epi pen. :( Back to listening to me instincts about what has caused me problems.

  14. We're usually the people in the aisles of the grocery store squinting to read EVERY ingredient list. I know everyone hates to grocery shop with me. I have to watch for MSG and MSG related ingredients also because its hidden under different names. Fun. And we do tend to get excited when we find new products that are glutten free. We might give alittle yippee before we realize we're in a public place. <_<

  15. Gail this sounds like an allergic reaction, have you had any other symptoms like hives? If you are still feeling like you are having trouble breathing you should contact your doctor to be on the safe side.

    Yes it might of been an allergic reaction. The symptoms are gone so I'm relieved about that. I just won't eat them anymore. It could be the berries itself or something they spray on them too, who knows. I already threw them away so I don't know where they came from.

    I'll be tempted to try organic locally grown berries at the farmers market to find out. But I don't know still alittle rattled about it.

  16. Last night I had a horrible time getting any sleep. My throat felt thick and a little swollen and it must of set off

    sleep apnea because I would wake up frequently with a need to catch my breath.

    I've been eating some blueberries and raspberries for the last 5 days after getting these big containers of them at Sam's. Thats the only thing different that I've been doing and also yesterday afternoon I had a cup of coffee in the afternoon to stay awake. I don't usually do that eigher.

    I know those fruits are high in salicylates and and I may have a sensitivity to them. Those of you who are did you have this kind of reaction? I'm wondering if I should take something like zantac for awhile. My throat still feels thick.

  17. I was diagnoised with this about 17 yrs. ago when I went to the doctor with pains in my chest. The doctor knew it wasn't heart related for some reason. He asked if I'd been coughing alot lately and I had. He told me what it was and I mentioned I was also doing bench presses with a barbell. Both those things caused irritation along the breastbone.

    I was just told to take ibuprofin and he gave me some cough med. told me to quit doing the bench presses....

    Anyway it went away. I never went back to doing the presses because it just wasn't worth the pain. If you have reflux is it causing a cough?

    If it is I would take care of it because its probably causing the irritation. It could be tied to celiac if your still getting stomach upsets and bloating, acidity or not enough acid in stomach because the symptoms are the same. It would take a gastro. to figure that out.

  18. You will lose weight eating vegetables, proteins, and small amounts of fruit. I feel better eating this way but have to eat avocadoes, nut butters and lara bars just to keep the weight on since I don't want to lose. Your really not missing much by not eating the breads that are gluten free. They usually have to be toasted to taste good.

    I still think eating a small handful of whole almonds will help in between meals to keep your blood sugar from falling. They also contain healthy fats.

    Good luck on the weight loss. Your energy will come back just being gluten free. :) All though some people expirence withdrawl because wheat and dairy has the same affect as morphine. Nice :P But like I said this isn't the case for everyone.
