  1. While visiting New Mexico, I'd like to make a suggestion for you to visit Chaco Canyon west of Albuquerque a couple of hours. It's a 1,000 year old Indian village (ruins) that's breathtakingly awesome to visit. The La Montanita food co-ops in Albuquerque are great for gluten free products. There's one on Rio Grande & Mathew, and another on Central...
  2. There's actually a official state "question": red or green? Meaning red or green salsa w/ your mexican meal. Corn tortillas are gluten free, refried beans are gluten free and the spanish rice. We've also got a beautiful new, semi-pro baseball stadium in Albuquerque. There's no other state in the country like New Mexico. I lived in Colorado for a decade...
  3. I joined Celiac.com in Nov. 2005 when I was first diagnosed. This message board has been a wealth of information and support. Had been doing really well and feeling stronger all time, until March, 1st this year. Six weeks ago thought I'd gotten food poisoning w/ terrible bloating and gas. But now that I've read many of your message re: bloating and...
  4. Dear Julie, My prayers are with you, and eveyone at Virginia Tech. A tradegy beyond comprehension, beyond words. Respectfully yours, Dianna
  5. I know the corned beef is soak in brine, but don't know the ingredients. We're having a special St. Patrick's Day luncheon today w/ this dish. Appreciate your feedback.
  6. Re: mean people. In one of Dr. Phil's books he made a statement that was life changing for me: "People only treat us the way we allow them to treat us". And Dr. Laura's statement: "We are the gatekeepers of who we allow in our lives". Eight years ago I pulled myself away from two mean sisters. It used to be their evilness was always done covertly...
  7. Just discovered a vital Gluten Intolerance Support Group in the Albuquerque area. The contact person is: Marilyn Johnson at marilynyj@comcast.net. Annual dues are only $10.00. Dianna
  8. Last year about this time went through a period of major itchiness. Went to an old-fashioned allergy doctor who diagnosed: DRY SKIN. He recommended Alpha-Keri bath oil (4 capfuls), Aquaphor ointment applied after bath/shower. He also said to bathe/shower every other day, and use body lotion daily. Surprise of surprises, it WORKED!
  9. I'm in the middle of a flair-up; first one in a long time. What do the rest of you do to reduce the constant pain? I did use the hot water bottle last night, but still the pain is tremendous. How about eating soft foods (definitely nothing spicey)? Do you have any naturopathic remedies versus western medicine. But if the pain goes on much longer I'd...
  10. It's been months since I checked out the Celiac.com Message Board. Was first diagnosed with Celiac Disease in Nov. 2005. This Message Board was my SAVING GRACE! During my initial healing, was on your Board for hours learning about Celiac Disease, feeling your pain, and gaining strength from everyone elses experiences w/ doctors, family & friends. Went...

    ARCHIVED Hidden Gluten

HONEY CASHEWS. Have been gluten free since Nov. 1, 2005 OR so I thought. Love the little bag of honey cashews I've been purchasing often for months. Today felt the desire to check out the calorie count / and amount of carbs., and out of the corner of my eye saw: WHEAT STARCH and MALTODEXTRIN. Am sure my eyes popped open, mouth dropped, and a loud growl...
  12. My juicer is a Breville; it cost $300; sounds like a lot, but it will last me a lifetime. You can search for recipes on the internet. I tried following recipes at first, but now I just throw whatever together, and always add 1/2 an apple for sweetness. Whenever I drink fresh vegetable juice (at least once a day) . . . it feels likes sunshine entering my...
  13. Hi Cassidy . . . Purchased a juicer (Breville) at least a month ago and LOVE the healthy feeling I get when drinking a glass of fresh vegetable juice! I always add an 1/2 apple for sweetness, but other than that only use vegetables, i.e. clove of garlic, a couple of green onions and whatever else I have on hand; cucumbers, celery, carrots, kale...
  14. This is a great recipe! Am eating it as I type. Didn't have all the ingredients, i.e. vinegar and sherry; and used gluten-free flour instead of cornstarch. And it still turned out very good. Am trying to cut down my animal protein to 1 oz. a day; so have enough left over to freeze. Thank you very much for this recipe.
  15. Curious how the rest of you folks eat graham crackers? I enjoy mine with milk and eat it like cereal, with of course a pinch of sugar. Yummy
