If you were only eating meat, veggies, fruit and rice - it does sound like you were eating gluten-free - and since you were being so strict, I doubt you were using any questionable spices, etc. on your meat....and if you were getting such a minute amount of gluten - far less than before - I am not sure you'd react as...
