  4. I don't do well with dairy. However, I read that butter is not on the same boat as other dairy for dietary purposes. The reason is that the ingredients in dairy that cause allergies and intolerances are proteins and sugars, both of which butter doesn't contain because it's pure fat. That way we should react to it to any other fat/oil. So I'm wondering it...

  6. Roxie, I think your weight gain is a sign of your intestines healing. Now again you're able to absorb nutrients and if your diet is high in calories it might lead to weight gain. I understand you're eating healthy but it's possible to gain weight even on a healthy diet. I'm wondering, what exactly do you eat? Did you replace a lot of your bread with gluten...

  9. Janet, I believe that dyslexia actually can be diagnosed at this age. My sister was diagnosed at the age of 6 and because of the early diagnosis she was able to get over it. But I agree with your that it might be too early for other diagnoses such as ADD. I hate to see so many parents putting their children on medication instead of just giving them the care...
  10. HAK1031, I am curious about your testing, especially the gene test. Is that something that can be done through a regular lab (and thus covered by insurance)? I'll also probably chicken out and buy a mix first and that way I can see what the consistency is supposed to look like, etc However, I would much appreciate it if someone could write down a recipe that really worked for them.   16. I used to love baking breads from scratch but when I tried making gluten-free bread it turned out horrible! I followed various recipes I found on the internet. Does anyone have a recipe for sandwich bread that's light and fluffy? Also, is the dough supposed to be tough (unlike wheat bread)? I used enough xanthan gum but it didn't seem to stick well. Help...
  17. Thanks for your responses . However, I'm a bit confused now. If it takes awhile for the symptoms to go away, how about the other way? I mean, for the fructose I have to watch which foods bother me. So is it possible that for example I eat an apple but don't get sick until 3 days later? That way it's hard to determine what made me sick
