I'm in the Czech Republic and haven't seen xanthan gum anywhere . But, the Benefiber they sell here still contains guar gum, it says "100% partially hydrogenized guar galactomannan" so no wheat dextrin like in the US. So, my question is, can I used Benefiber in baking in place of regular guar gum? Would the "partially hydrogenized"part make this any different...

Recently I dicovered buckwheat flour and I am in love with it! Usually my dough turned out dry and grainy when using rice flour but not with buckwheat! I used a recipe from the Neiman Marcus website (everyone's heard the urban legend, right?) and just substituted the flours. So the test did not confirm celiac disease. The only thing that was found were several intramucosal lesions. To be honest I'm not exactly sure what they are. I have a colonoscopy and my doc wants to take a biopsy of these lesions. -

Hey, I can't recommend anyone but what don't you try and work with some homestay agency? That way you can specify that you're interested in a family with a celiac member and hopefully they can accommodate you. I'm sorry those 4 weeks were so horrible for you! But at least you have a proper diagnosis now. As for me I don't think I'd go back to gluten eating for the endoscopy since I already had one and it was negative. My doctor is great when it comes to running tests, etc. but I think she's also very results-oriented. Could it have been the sweetener? Diet Pepsi uses two kinds - aspartame and sucralose (aka Splenda). The way sucralose works is that it passes through our guts undigested, hence the "no calories" part. That's funny, I was just at the store yesterday (before reading this topic) and was so excited to have found this new Rice Chex on the shelf! I'm eating a bowl with rice milk right now. Watch out for the generic version, that one still has barley malt extract (at least the one sold by my grocery store does). -
I think it's a mistake. I've bought their regular plain mix many times before and there was always only one packet. I don't see why it would be different for the cinnamon one.
