Is there a general timeframe one would expect to have between eating gluten and having a reaction? Does it depend on the amount of the gluten, or does that only affect severity? Oh no! I read somewhere that bacon was OK to eat - wheat free. That might explain why I've been having some trouble. I don't know what brand the bacon is at my cafeteria at work. So...there really is a chance of finding gluten in bacon?? -

Yipes! I saw my doctor today and she suggested that I be tested for celiac - WOW. I've only heard bad things - I'm so glad to know that she thinks it is a good idea. True! I knew someone would point that out. I should perhaps keep it off and just say wheat-free since _____, but I have a really hard time with being inaccurate with information.
