Uncle Ben's Rice Pudding!

Okay, so when I first went gluten-free, I got excited about rice pudding (but since then I've been struggling with dairy products, so I haven't actually gotten to have the rice pudding! But I am starting to appreciate soy milk, so now I might get to have rice pudding again:-)).

I bought the box of Uncle Ben's Cinnamon and Raisins Rice Pudding. The ingredients listed on the package are:

Precooked long grain rice enriched with iron (ferric orthophosphate), thiamin (thiamine mononitrate) and folate (folic acid), sugar, raisins, corn syrup solids, modified cornstarch, paritally hydrogrenated canola oil, salt, xantham gum, spices (cinnamon, allspice), sodium caseinate, dipotassium phosphate, partially hydrogrenated cottonseed/soybean oil, mono and diglycerides, tricalcium phosphate.

So by the ingredients on the box, it looks as though it is gluten-free, correct?

A funny note about this product, if you go on Uncle Ben's website to look at the ingredients, it's certainly not gluten-free... it contains soy sauce (with wheat clearly labeled). HOWEVER, if you look more closely, according to the website, the rice pudding also has carrots, red peppers, and broccoli as ingredients! Obviously they have listed the wrong set of ingredients for the rice pudding:-P I emailed them, so hopefully they'll make the correction soon.

Rice pudding's pretty easy to make from scratch. Just make sure to use short grain rice, and cook much like risotto to get the creamyness. You can use just water for this, or coconut milk, or another milk substitute. Usually, you add sugar and spices as well. (I've made coconut mango, vanilla, and pumpkin flavors that are tasty. The coconut mango recipe is in the recipes section under the "As Promised, A Few Recipes" post.

      I have been looking for new dishes. I was surprised to find dishes made of wheat straw. Are these safe for us? I'm very careful to avoid products that may contain gluten. I never thought I might have to check for wheat in dishes.

      Welcome to the forum, @Hope07! The reference range would refer to what is considered normal in healthy people. So, 7 or less would mean there is no indication of "active" celiac disease. Apparently, you are doing very will in avoiding gluten. The "Tissue Transglutaminase IGA" is the centerpiece antibody test that clinicians run when checking for celiac disease. My only reservation would be that whenever the TTG-IGA test is run, a "total IGA" test should also be run to check for IGA deficiency. When IGA deficiency is present, other IGA tests, such as the TTG-IGA can be artificially low and result in false positives. In the absence of any symptoms indicating your celiac disease is not under control, however, I would take the result you posted at face value.

      Going on a cruise next week and I’m a celiac. Bought a bottle of GliandinX. Should I just take two tablets per day as a precaution? Never tried this before!! Any help is appreciated!!

      Hola! Not sure if I’m asking this in the right place so apologies if not! I just had a full blood count as part of my first check up after being diagnosed with celiac disease 7 years ago!! With Covid lockdowns then living in Spain for 3 years and now back in the UK, I kept getting missed in the system but finally I’ve had a check up! Does anyone know what this means?  Tissu transglutaminase IgA lev:  0.30 U/ml Reference range:  Below 7 Thank you!
