Hello! I've been searching the internet and various cookbooks for a gluten-free rugelach (or similar strudel) recipe that actually works and doesn't turn out like glue. Does anyone have one they would be willing to share? I'd really appreciate some help here because I'm totally stumped. Thank you very much.

Sincerely,

Sherri

hi,

the main dough is 1 cup flour 1 stick butter 4 ounces cream cheese, then filling of your choice I have used apricots, or can use a mix of choc chips melted with nuts and ondensed milk , or seen them with jam .

for the flour I would include some corn starch and conf sugar for a little lighter texture with rice flour even a little nut flour then a little pinch of gelatin and use your favorite filling .

the apricot one is apricots over double boiler cut and mash add alittle oj till consistancy you want

the choc one is1- 12 ouce bag chips 1cup nuts, walnuts, 1 can condensed milk heat and stir till incorporated, watch carefully choc dont burn

or use jams of choice

you will spread on your dough and bake,

brush top with alittle egg yolk and bake

once cool sprinkle with conf sugar ,slice

I'd like to clarify: Is the pain you describe in the area just below your chest constant, or does it only appear when you start moving?

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
