Cross-contamination/shared oils and cheat days?

Hi everyone, 

About a month ago, I was diagnosed with Celiac and it's been a bit of a journey thus far. While I've done a pretty good job of sticking to a strict gluten-free diet, I have had a few moments when I've been craving gluten and broken my commitment (just last week I made a batch of brownies, only to consume 1 and throw out the rest.) 

For those who have been gluten free for a longer period, I'm curious to know if these cravings stop, or if you always wish you could just pig-out on a deep dish pizza? 

Additionally, I met with my nutritionist earlier this morning and she informed me that with Celiac, it's incredibly important to pay attention to foods with possible cross-contamination or shared oils (specifically foods like french fries.) I understand this, but how big of a deal is this really? Provided I don't feel physically sick afterwards, is it OK to occasionally have fries that may have shared a friar with other foods?

Maybe an accident or a shared fryer won't hurt you a few years from now - But you have to heal first.  You need to be strictly gluten-free for a few years, maybe.

-_- Honestly any gluten can hurt you and trigger a antibody flare up in the background that will hurt you inside for weeks or months. Complications can arise like other food intolerance issues, other disease, cancer, etc. I have many complications and wish I had stopped eating years before I did. Read the newbie 101 thread

Yes you get cravings, while we suggest the whole foods only diet. THERE are gluten free everything now days to have your CHEAT without really eating gluten or getting sick. I have turned to being a chef and a gluten free bakery owner after my diagnosis and love making and providing gluten free, grain free, and dairy free meals for people. Sort of my way of saying screw this disease I will enjoy life without the gluten.

      You should be fine.  You may start feeling better within a few days.  Someone who is very low in thiamine may notice improvement within hours.   Did you get the NeuroMag  or another magnesium supplement?

      Yes Bobs redmill cgf oatmeal I started when I became gluten-free. So taking all 3 with breakfast should work? Will I notice any reactions getting used to these or should I be fine. Thanks

      Hello, @pilber309, welcome to the forum! Are you currently consuming dairy?   You mentioned something about lots of yogurt and cheese, but did you cut it out or are you eating lots of it?   Could you clarify please? Some people with Celiac react to casein, the protein in dairy the same as to gluten with antibodies and villi damage.

      You may want to skip the oatmeal.  I believe you're trialing a gluten free diet while waiting for an appointment with your doctor in the new year and doing a gluten challenge then.  Some people with Celiac disease react to the protein in oats called avenin the same as to gluten.  Cross contamination between oats and gluten containing grains is possible.  Are you consuming certified gluten free oats?   I would hate for you to have a reaction to the oats and blame it on the vitamins. Yes, it will be fine to take them all together.  I take mine all together, B Complex, Benfotiamine and TTFD Thiamine with breakfast. If you're really anxious about it, just take the B Complex and Benfotiamine at breakfast and the Thiamax at lunch.  You won't have to take a second B Complex with the Thiamax.

      So I purchased the Life Extension Benfotiamine with Thiamine along with the Thiamax. I will take along with my Super B Complexes. I stopped taking the multi vitamins. Should I take all 3 vitamins/supplements together with my morning oatmeal breakfast? Do you think I will experience any bad symptoms when taking them.
