Well its been 28 days since my last post here. Since wife has been gluten free for near 6-7 weeks she has lost 21 pounds that she didn't need to lose. She eats in am as well as a moderate lunch then either of us fixes supper. Cant understand weight loss, 135 down to 114. Just trying to understand.

Perhaps having just a few spoons of nut butter, or avocado in the evening can help, BCAAs can help prevent muscle loss. 
I found fasting and not eating supper and eating keto in combination with resistance training, has caused me to gain muscle mass the past few weeks after over 5 years of trying and failing to gain much weight but everyone's metabolism is different.

Is she having any other issues? Digestion, bowel, joint, neurological, etc? There are many other things that often come about as secondary issues.

She has a test Friday to check if bacterial infection in small intestine is gone or not. She just gets very discouraged when she steps on scales. Trying to be as supportive as i can, seeing how we both are new to this problem. Thx.

If she had SIBO then a high fat/protein diet low carb should be part of the treatment. On this diet "ketogenic" your body uses fat for fuel and in the absence will consume body fat or muscle. The key to preventing this is 1.eat more fat to fuel the body, 2. Eat protein to repair and rebuild muscle 3. being active and engaging muscles to prevent muscle wasting. 
I again would suggest eating a bit more easy to digest plant-based fats, and taking digestive enzymes to ensure her body can use what she eats properly.  Perhaps something as easy as protein bar like Julian Bakery bar in the evening? I wish you luck, I lost a ton of weight before my diagnosis from 200+ down to 145lb and then a sudden drop again after going gluten-free down to 126 for a 5'11" male. It took me til now to get up to 139. But on the bright side, it is now all muscle instead of flab.

      I hope you are on the mend soon. About 1 in 5 people who contracted chicken pox as a child go on to develop shingles in later life - it is not uncommon. There are 5 known members of the herpes virus family including chicken pox that commonly infect humans, and they all cause lifelong infections. The exact cause of viral reactivation as in the case of shingles or cold sores is not well understood, but stress, sunburn and radiotherapy treatment are known triggers.       BFree bread is fortified with vitamins and minerals as is ASDA own-brand gluten-free bread. All the M&S bread seems to be fortified also.
