Yet another scientist chiming in.  Again.

Fructose malabsorption can happen in Celiac Disease and other gastrointestinal disorders.

Fructose malabsorption symptoms include gastrointestinal symptoms as well as skin rashes and worsen asthma.

Bananas as they ripen contain increasingly more fructose. 

Since banana bread is made with ripe or over-ripened bananas, it, too, could trigger a fructose malabsorption reaction.

Fructose has to be processed through the liver, just like alcohol, which can lead to elevated liver enzymes and non-alcoholic fatty liver disease.
