Trying to launch my gluten-free bakery but having trouble finding a comercial kitchen in Austin TX

I'm on a fixed income and do not have the money or selling volume for the rental rates of gluten free commercial kitchens I can find. Any insights, ideas, referrals, suggestions, etc are welcome. Thank you

I would check with the City of Austin to see if you are able to start out in your home kitchen. Our city changed its rules during the pandemic to allow such home business. Another option might be to see if the city has a commercial kitchen you can rent time in--my city used to offer this but ended it a couple of years ago. The last option might be to find an existing commercial kitchen that might allow you to rent time during times when it's not in use.

      Thoughts? Non-endoscopic Celiac diagnosis in two year old

      Okay that is really good to know. So with that being positive and the other being high it makes sense she diagnosed her even without the endoscopy. So glad we caught it early. She had so many symptoms though that to me it was clear something was wrong. yeah I think we had better test us and the other kids as well.

      One doctor suggested it, but then seemed irritated when I asked follow-up questions. Oh well—

      @GlorietaKaro, your respiratory reactions to gluten make me wonder if there might also be an allergic (anaphylaxis) component at work here.

In the meantime, I will carry on has I have been— it’s working! Thanks also for the validation— sometimes I just feel crushed by disbelief. Not enough to make me eat gluten though—
