Opening Storing Canyon House Bread

Asking YOU the experts, best way to open and then store Canyon House or Schaar sealed then bagged breads! Currently I just slit at one end on top just enough to slide out two pieces then scotch tape shut as best I can, slide into outer bag and twist then clip. If I’m down to half a loaf I may fold inner heavy bag and elastic band it shut, slide into outer bag.  Is it better to Saran Wrap it? Tupperware? Freeze slices?

I wrap half of the loaf in waxed paper, put it in a freezer safe plastic zip lock bag, and chuck it in the freezer.  

The rest of the loaf or several slices, I wrap in waxed paper and store in original packaging or another zip lock bag in the fridge.   

I can't eat a whole loaf before it goes moldy.

      Hi, I just had my 6 month check after being diagnosed Celiac 6 months ago.  All of my panel numbers were normal except: Deamidated Gliadin Abs, IgA (It is 31 with high being over 30)  I have also been having symptoms again. Am I not actually being as careful as I think I am or does it take longer than 6 months for this particular test to come back down?  I can't get ahold of my doctor this week as she is out.     Thank you!

      That is very strange, because it looks to me like two very different test results, but for the same test! It's definitely time to contact your doctor for clarity on this.
