Cinnamon Coffee Cake

1 cup butter, softened

2-3/4 cups sugar, divided

2 teaspoons vannilla extract

4 eggs

3 cups flour, I used Betty Hagmans mix

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

2 cups sour cream (16oz)

2 tablespoons ground cinnamon

1/2 cup chopped walnuts (optional)

In a large mixing bowl, cream butter & 2 cups sugar until fluffy. Add vanilla.

Add eggs, one at a time, beating well after each addition.

Combine flour, baking powder, soda, and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth.

Combine remaining sugar, cinnamon, and nuts & mix into batter.

Spoon batter into a well greased tube/bunt pan.

Bake at 350 for 70 minutes or untill cake test done.

Cool for 10 minutes. Remove from pan.

Yield: 16-20 servings

Mine turned out well the first time I made it. My non gluten hubby loved it also, which is rare.

Make sure you cook long enough. ENJOY

Can this be made with a premade gluten-free flour mix - like the GFP one?

      Thanks for your input.

      If you have hemorrhoids 1x weekly I don't see how you have time to heal from one episode before you experience another one, unless each one is a very minor event. Have you consulted a physician about your hemorrhoid issue? It's not normal to be having an episode every week unless it is really one episode that is not completely healing between weekly flareups.

      No I haven't had one since 2021. I rarely have more than 1 per week.

      Sorry, I see that now as I reread your original post. You say you have hemorrhoids "only once a week" now. When I develop hemorrhoids, which is once every few years now, it generally takes 3-4 days for healing to take place. So, it doesn't seem like you could have much relief time between episodes if you have them weekly. Have you had a lower GI scoping done recently?

      Everyday I eat a medium to large apple in the morning and a large banana at night. I eat a cup of oatmeal in the evening. The ezekiel wheat bread I eat has a good amount of fiber. I haven't dealt with constipation for at least a year. Most of the time my feces are soft.
