I don't know if you know what a caramel slice is, but it is so yummy and decadent. Real happy tasty feeling.

The Coq and Pullet Deli's Gluten free Caramel Slice, Timaru

Base

75g butter

1/2 cup sugar

1 large egg

1tsp vanilla essence

1 cup gluten-free flour

1tsp gluten-free baking powder

Caramel

1/2 cup sugar

2 tbsps golden syrup (a bit like treacle or molasses)

150g butter

3/4 can sweetened condensed milk

Topping

1 and 1/2 cups chopped gluten free chocolate

Preheat oven to 180 C

Soften the butter slightly

Add the sugar and cream well

Add the egg and vanilla and cream some more

Add the dry ingredients

Pour into a greased and lined sponge roll pan, making sure that the lining comes well above the rim, so that you can lift it out with ease.

Bake until the base springs back when touched, about 15 minutes.

Combine the caramel ingredients in a saucepan and gently simmer, until melted.

Spread over the cooked base and place back in the oven for 12-15 minutes, until browned.

Once cooled, melt the chocolate in the microwave for a minute at a time, until smooth. Pour over the cooked base and spread with a knife.

Makes 16 slices.

I don't even know if you get evaporated milk over there. But the recipe is so yummy.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
