Made A Great Dinner Last Night

Thought I would share with you all, I made a great dinner last night, Cocconut chicken and orange marmalade sauce for dipping. It was my hubbys b-day and wanted to make a meal that I could also enjoy. It was great I made it all the time befofe going gluten-free, I only had to modify it slightly now.

Cocconut Chicken

4 skinless bonless chicken breasts cut in half (so they are not to thick)

marazetti dressing (used for cole slaw)

cocconut

gluten-free bread crumbs

orange marmalade

horseradish

dip chicken in marazetti dressing to coat it on both sides then dip in a mixture of cocconut and bread crumbs until fully coated, place in a greased baking dish bake at 350 for about 20-35 minutes or until chicken is cooked all the way through and coconut is lightly browned.

while chicken is baking mix a few spoonfuls of marmalade and aprox 1 spoonful of horseradish (dependes on how strong you want it to be) refrigerate until ready to eat then microwave for about 30 sec to slighty warm.

use marmalade for a dipping sauce for your Cocconut chicken.
