Pour 1-2 Tablespoons of olive oil into a 10 inch frying pan.

Turn stove onto HIGH

Get bag of hash browns out of freezer

Swirl hot oil in pan to cover bottom and turn burner to MED LOW

Add a handful of hashbrowns to pan - enough to cover bottom of pan, but just barely

Cook 15 minutes - Go take shower

Return to stove in whatever state of dress your 15 minutes has allowed you. Stir hashbrowns. They should be cooked, but not turning brown.

Break 2 eggs into a bowl and whisk together so they are well blended

Pour over hashbrowns.

Add leftover meat or veggies from the night before, maybe a little cheese, and some salt and pepper to taste

Turn up heat a little bit and go finish getting dressed - 5 minutes

Return to stove and check frittata. If it's really runny, swirl the pan to get the runny parts to the edges. Turn off burner (electric) or turn to very low (gas).

Put on makeup. - about 2 minutes

Return to stove. It's OK if it's still a little jiggly, it should still be hot enough to finish cooking.

Scoot a spatula around the edges of the pan to make sure everything is loose.

Flip 1/2 of the frittata over onto the other half. The bottom should be a fabulous brown color.

If you're worried about it not being cooked enough you can leave it in the pan for another minute while you frantically gather up everything you need for work that day.

Slide frittata onto plate and enjoy!

Note** This is a big breakfast for one person. With a few more hashbrown bits and another egg it would be great for two people.

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
