I guess I'm lucky. My most favorite dinner in the whole world has always been roast beef with oven roasted potatoes, carrots and onions. I always chose this for my birthday dinner from the time I was just a little kid. Mom always cooked our favorite dinner for our birthdays. Now I have Namaste chocolate cake instead of gluten cake. :D That's the only difference. That and my mom has been gone for 24 years now :(

My favorite meal ever, greenbeans with onion and chicken breasts with rice noodles. With an apple for dessert. It is so amazing! I know it's simple but I love it.

I LOVE the Blue Diamond Nut Thins. Mmmmm.

And I made these really amazing gluten-free peanut butter cookies about a week ago. I only got one...my family, who's not gluten-free, ate them all.

I had the GREATEST soup yesterday; Amy's Organic Tomato Bisque. It's gluten-free and tastes amazing!

Thanks, that's a great addition that I hadn't thought of.

Other diseases, medical conditions, medications and even (for some people) some non-gluten foods can cause villous atrophy. There is also something called refractory celiac disease but it is pretty uncommon.

knitty kitty asks a very relevant question. So many people make the mistake of experimenting with the gluten free diet or even a reduced gluten diet soon before getting formally tested.

Another great fiber option is dried apricots. Four of them give you 3g of fiber and I find they don't produce all the gas that some other high fiber options do. They taste good too. Costco sells a large bag of them that are labeled gluten-free so you don't have to worry about cross contamination issues like you might in bulk grocery settings.

Wow, that's alot of info, Thanks!!!! I had my intake with Nutrionist where we went over basics and then will have follow up where we will talk about all the questions I've come up with (including the fiber question and so many more). I'll talk to her about the info you provided as well.  Thanks again (newbie here 😀)
