Mexican Shepherd's Pie

I wanted Shepherd's Pie last night and Mexican so I made a ccompromise and made this. It was so yummy that I made another one this a.m. since hubby took the leftovers to work!

Mtndog's Mexican Shepherd's Pie

1 Gillian's pie-crust (the one that says perfect for quiches- soy free too)

1 pepper (green, yellow or orange)

1 onion

1 cup sweet corn

1 lb. gound beef

1 tb cumin

1 tb minced garlic

1 tb paprika

1 tsp oregano

1 tsp pepper (cayenne or chili)

1 cup tomato sauce (I used Classico's Traditional Sweet basil)

Heat oven to 375. Spray pie crust with olive or canola oil. Bake for 20 min.

Cook 1 onion chopped in olive oil for about 5 min. Add 1 tbsp of minced garlic.Add 1 lb of ground beef and all spices (you can adjust the spices to you liking but I prefer more cumin and garlic salt). Add tomato sauce and saute until beef is done.

Remove pie shell from oven and place on cookie sheet. Add ground beef and veggies. Top with cheddar or monterey jack.

Bake at 400 for 10 minutes and then broil briefly to crispen crust and brown cheese topping.

That sounds really yummy MD. Will have to try that. Haven't tried a gluten-free pie crust yet.

My wife makes something she calls hobo dinner (I think it's actually a variation of sheperds pie). No crust, she puts the seasoned cooked ground beef on the bottom of a casserole dish, then corn or black eyed peas, or even both - one on one side & one on the other, (that allows you to control your corn & bep distribution while eating), then mashed potatoes on top. Bake in the oven for about 30-45 minutes, put cheese on top, bake another 10 minutes or so.

There ya go. Just like the hobo's used to make (?). :wacko:
