What To Eat?

I'm really struggling to find things to eat. My blood work tested negative for Celiac, but my allergist and dietician want me on a gluten free diet due to my symptoms. The problems is I am also allergic to many, many foods. Yeast, apples, melon, tomatos, rice, potatos, tuna, strawberries, nuts, and more. I'm really struggling with finding foods to eat. I visit my allergist again in a few weeks, but I'd love any advice any of you have to offer. I'm basicly sticking with meat, veggies, some cheese, and popcorn for snacks.

Any thoughts?

Cici

Original Chebe bread has no yeast and they also have a mix that has no dairy. Open Original Shared Link

Original mix -- INGREDIENTS: Manioc (tapioca) flour, modified manioc starch (100% manioc), dry milk, salt.

All Purpose mix -- INGREDIENTS: Manioc (tapioca) flour, modified manioc starch (100% manioc), iodine-free salt, cream of tartar, sodium bicarbonate.

Also, I didn't see yams in your list or teff or quinoa. There's a gluten-free instant quinoa that's really good. Open Original Shared Link

Hubby and I have been making pizza on top of a grilled portabello mushroom (treat them like little individual pizzas). It's gluten-free and it's healthy!

We also get hemp tortillas at Whole Foods that make great quesadillas. They are gluten-free with no rice.

Also, Tasty Bites might offer you some convenience foods if you like Indian food. I eat several of their dishes with tortilla chips, like a dip. Open Original Shared Link

I notice on your list you say "and more" but we really have a better chance of suggesting something suitable if we know everything you can't have. Hope this offers a few ideas.

Make a list of the foods that you CAN eat, we sometimes forget some!!

My food allergies got better after I was gluten-free for awhile.

Yours will probably get better also...

Question: How did you know you were allergic to those foods? I always think I'm being gluten-free, but then I start having reactions, which leads me to believe that it's "gluten and beyond." How can you tell what other foods it is? I have delayed reactions so I don't know?

Body dysmorphia experience. When I was at the worst of my gluten problem I use to get chronic constipation; I would spend long time sitting on the toilet. One day as I was tired of sitting, I rested my head on my hands and my elbows on my knees, as soon as I felt the pressure of my elbows on my knees the perception of my body changed to that of a tarantula; I visualized and it felt real. The perception went away as soon as I removed the pressure on my knees, I deducted that the pressure of my elbows on the knees caused the sensation, so I repeated the position and the sensation of having the body of a tarantula happened each time. I have not had that experience since then because I started a gluten-free diet short after. I wonder if those people that look distorted to themselves in the mirror could have something similar but with the responsible sensory contacts located on their feet. I want to document this experience because it might help some research or others, it sounds crazy but I feel the right thing to do is to share it.

Get tested for vitamin deficiencies.  Though neuropathy can be a symptom of celiac, it can also be caused by deficiencies due to poor digestion caused by celiac and could be easier to treat.

Thank you so much for your response  Yes it seems as though things get very painful as time goes on.  I'm not eating gluten as far as I know.  However, I'm not sure of cross contamination.  My system seems to weaken to hidden spices and other possibilities. ???  if cross contamination is possible...I am in a super sensitive mode of celiac disease.. Neuropathy from head to toes
