Plum Polenta Cake

I was really suprised at how nice this turned out!!

I did mine in a slow cooker/crockpot but I think it could be done just as easy in the oven - probably around 180 centigrade until the top browns.

Ingredients

150g(5oz) butter at room temperature - plus extra for greasing

200g(7oz) sweet red plums, thickly sliced

150g (5oz) caster sugar

2 eggs beaten

100g (3and a half oz)ground almonds

50g fine polenta (cornmeal)

Half a teaspoon baking powder

Grated rind & juice of half an orange

Whipped cream to serve

Decorate top with toasted almonds

Method

1. Butter your heatproof dish (big enough to take 2 pints) and line with greaseproof paper.

Arrange the plum slices in rings in the base of dish.

2. Beat the remaining butter & sugar together until light & fluffy. Gradually beat the eggs and ground almonds alternately into the creamed mixture. Stir in the polenta, baking powder, orange rind and juice and beat until smooth.

3. Spoon the cake mixture over the plums and smooth with a knife. Cover the dish with buttered foil then stand it on an upturned saucer in the slow cooker pot. Pour boiling water into pot to come halfway up to side of the dish. Add cooker lid, then cook on 'high' for 3 and half hrs or until top of cake is dry and springs back when pressed.

4. Leave to cool slightly, then run knife around inside of dish to loosen cake - turn out upside down. Sprinkle with toasted almonds and sift icing sugar over top.

Just a couple of questions, what is castor sugar? And do you know what 50g of cornmeal converts to?

p.s. love the new avatar :D

Um, last I checked polenta wasn't the same as cornmeal, do you use straight dry cornmeal or prepared polenta that comes in water?

Um, last I checked polenta wasn't the same as cornmeal, do you use straight dry cornmeal or prepared polenta that comes in water?

      I hadn't been eating gluten free before having the antibody test done. I started eating gluten free after having the test done because the gastro PA told me to eat gluten-free for 6 months. I'm now 3 months in.

      I tend to agree with RMJ. Your doc took the reasonable and practical approach to diagnosis. All things considered, it was the right way to go. However, if you have first degree relatives that show signs of possible celiac disease, urge them to get formally tested before they start the gluten free diet.

      It sounds like you have a very reasonable GI doctor, who diagnosed you based on family history and symptoms after eating gluten. I would consider you lucky! The other option would be to make yourself very sick by doing weeks of a gluten challenge prior to an endoscopy.
