New On gluten-free Diet? Corn, Sugar And More

jUst to say for people new on gluten-free diets. I have been on one for 28 years and have never found that corn or sugar have been tolerated. Maybe it's just me but I have heard of other celiacs with similar experiences. They are not all that good for you anyway b/c of the high glycemic index and affect on blood sugar issues etc...I use Agave and Stevia and sometime maple syrup to sweeten. They taste good and my step kids who are not on a gluten-free diet love the baking I do gluten-free and kow its sugar free and really enjoy them. I also use dates sometimes for a sweet base but they are high in sugar. I'm not sure of the connection but it seems to me there may be one for some people so if you not having success gluten-free then you may wish to add these considerations to your diet planning. It makes it harder but you can do a lot with the other natural sweeteners and corn starch can be replaced with potato or tapioca starch in bread and muffins etc....For what it's worth...

      Thiamine interacts with all the other B vitamins.  Thiamine and B 6 make a very important enzyme together. With more thiamine and other vitamins available from the supplements your body is absorbing the ones you need more of.  The body can control which vitamins to absorb or not.  You're absorbing more and it's being transported through the blood.   It's common to have both a Thiamine and a Pyridoxine deficiency.  Keep taking the B Complex. This is why it's best to stop taking supplements for six to eight weeks before testing vitamin levels.

      Yes I took a supplement that had B6 in it, low dosage though. I've stopped taking that. B1 doesn't affect other B vitamin levels?
