Gluten - Free Waffles

Made this for my Celiac Wife.

2 C Brown Rice Flour

1/2 C tapioca

1/2 C Almond Meal

1 t Xanthan gum

2 t Baking soda

1/4 t Salt

1 T Sugar

2 T Oil

4 Eggs

2 1/2 C Almond Milk (real milk could be used too)

1/2 t vanilla

Put dry ingredients in a large mixing bowl and wisk together. Add all the wet ingredients and mix thuroughly. This mix makes great pancakes as well.
