How Far Back Does Gluten Exposure Set Them?

I know I'm early in the game here but I keep getting my daughter exposed to gluten! She was very upset about not being able to have some cake and I got her something else at a friends house. Half way through the chips, I realized they had wheat in them. I hadn't even read the label!! I was so upset with myself and felt so dumb and frustrated. Then she had bad D within 10 min. Not sure if she would have had it anyway or not.

Is any exposure like going back to the beginning and starting all over again?

How long did it take you to feel like you could really do this and keep them safe from gluten? (Will I ever feel that way?)

How far it sets you back depends on dose and sensitivity, but it shouldn't be like starting over. After about 7 months I kind of got the hang of it with my son. Once he did a gluten challenge for 3 days and that set him back a month or two, but a few chips shouldn't be too bad. It takes a long time to figure out all those unexpected gluten sources. Don't beat yourself up over it.
