Mallow Whipped Sweet Potatoes

I got this recipe from somewhere :lol: Its so good!

Mallow Whipped Sweet Potatoes

2 cans (23 oz. each) sweet potatoes or yams, drained

6 T. butter, softened, divided

1/2 tsp. salt

1 tsp. cinnamon

1/4 tsp. nutmeg

2 cups mini marshmallows, divided

3 T. brown sugar (or something sticky)

2 cups gluten-free rice krispies

1. Combine sweet potatoes, 4 T. of the butter, salt and spices. Beat with a mixer until smooth.

2. Stir in 1 cup marshmallows (I add another handful)

3. Spread into a sprayed 1 1/2 quart baking dish.

4. Top with the remaining marshmallows (throw on some extra)

5. Melt remaining butter in a dish or pan and stir in cereal and sugar.

6. Sprinkle over the marshmallows.

7. Bake at 350 degrees for about 20 minutes or until marshmallows get puffy and start to brown.

8. I serve it with a spoonful of whipped cream or topping.

Comments:

This could work as replacement for warm pumpkin "pie", I think it would fill 2 pie plates, but you may want to make a crumb crust for it (hey...that's a good idea). I never tried it cold. I usually make 1/2 a recipe and put it in an 8x8" uncovered baking dish. I am sure Rice Chex would work if you break them up a little. A very easy recipe!

This sounds very good! Thanks for posting.

I wonder if Rice Chex could be used instead of the gluten-free rice krispies? Just wondering because since Rice Chex are so mainstream they COULD possibly be cheaper/easier to find than gluten-free rice krispies.

I think I'll try this one for this year's holiday dinners!!!

Oops....sorry, went back to print the recipe and saw that you did add the question about using Rice Chex... LOL... I didn't get that far the other time... got too HUNGRY!!!!

What's the texture like? It seems kinda strange, rice krispies on top of sweet potatos.

It just gives it a little crunch kinda like sprinkling nuts on top. Sorta like bread crumbs on top of a casserole. Pretty good though ;)

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
