Replacement For Garfava Bean Flour

When I first started gluten free baking I bought a couple of Bette's books and one of Carol Fenster's. I am really just now getting into breadmaking in a serious way and I don't like bean flours. What would you recommend I replace the garfava with? I have been using quite a bit of buckwheat lately. Would this work as a substitute? Or what?

I can't have legumes, so the bean flours are not an option for me. I like to sub in a similar protein content flour for the bean flour. My favourite is sorghum flour. I like the flavour it adds to my baking. Here is a list of appropriate subs.

Teff, Sorghum, Rice, bean flours, brown rice, quinoa, millet, amaranth, and cornmeal are a few options. These provide bulk and protein as well as the vitamins.

      I have been looking for new dishes. I was surprised to find dishes made of wheat straw. Are these safe for us? I'm very careful to avoid products that may contain gluten. I never thought I might have to check for wheat in dishes.
