I had to look up "TVP" and it is this product: https://www.bobsredmill.com/product/tvp-textured-veg-protein What type of test did you use? Was it a mail order kit, if so, what brand, or did you send out samples to be tested at a lab? -

Yes I have 2 eggs per day and I drink one cup of milk the. Untreated celiac
1000 calories per day is not near enough to sustain your body's needs. You should be aiming for twice that much. You are in a borderline starvation mode and even apart from celiac disease that explains a lot of your medical issues. And you should be aiming for 75-100 gm of protein per day.
