Wraps/flat Bread's?

Hi!

Anyone have a recipe for flat bread or wraps that don't fall apart when fold them or roll them? I'm dying to find one (I would order them from the gluten free mall, but they don't deliver internationally).

I'm no help on the recipe aspect, but I use corn tortillas all the time. the trick is to hea them up before trying to fold or roll them. 20 seconds in the microwave or a minute in a pan work. On the go, I haven't figured out wha tto do yet...

hey,

there's a message on this board with a recipe for poori, it's an indian flatbread. but it's fried. and it's suuuuper yummy. no need for the sugar/cin, just try it plain. my hubby and i make it frequently, he loves it and he doesn't need to eat gluten free. we eat it with hummus, or cheese (goat primarily), or whatever we think would go well with it. try it, i think you'll really like it.

LibbyK thanks for the tip I had not tired to heat corn tortilla's up! I can get gluten-free corn tortilla's at the super market, I will try that on the weekend.

Flour Tortillas

1 and 1/4 cups gluten-free flour (I use Bette Hageman's featherlight mix)

1 t xanthan gum

1 t sugar

1/2 salt

1 T almond meal/flour

1 T oil

1/2 cup water

Directions:

1. mix dry ingredients, then add oil and water

2. divide dough into 4 equal parts

3. roll each section between 2 sides of a cut-open plastic ziploc bag until tortilla-thin (can dust wax paper with cornstarch or other gluten-free flour if it sticks)

4. cook, one at a time, on a heavy pan (cast iron is best) that is lightly oiled and over medium-high to high heat. Prick all over with fork to prevent bubbles forming/puffing up. Cook until lightly browned - less than a minute, then flip over.

5. Makes 4 8-inch tortillas

I fill mine (1/2 circle) with guacamole and shredded cheese, then flip over top and reheat over hot pan until cheese is melted. YUM! also good for quesidillas, and wrap sandwiches. Store in ziploc bag in fridge - reheat in microwave 10-20 secs or in hot pan before using.

Williams Brand Taco and Chili seasonings are gluten-free. McCormick's seasonings are gluten-free...you can use chili powder, onion and ground cummin and that is about what is in a taco seasoning packet.

I tried the flour tortillas again - this time rolling between two sides of a cut-open gallon size ziploc bag -it works really well - doesn't stick...even without flour dusting! I'm going to edit my original recipe to include this!

      Body dysmorphia experience. When I was at the worst of my gluten problem I use to get chronic constipation; I would spend long time sitting on the toilet. One day as I was tired of sitting, I rested my head on my hands and my elbows on my knees, as soon as I felt the pressure of my elbows on my knees the perception of my body changed to that of a tarantula; I visualized and it felt real. The perception went away as soon as I removed the pressure on my knees, I deducted that the pressure of my elbows on the knees caused the sensation, so I repeated the position and the sensation of having the body of a tarantula happened each time. I have not had that experience since then because I started a gluten-free diet short after. I wonder if those people that look distorted to themselves in the mirror could have something similar but with the responsible sensory contacts located on their feet. I want to document this experience because it might help some research or others, it sounds crazy but I feel the right thing to do is to share it.

      Get tested for vitamin deficiencies.  Though neuropathy can be a symptom of celiac, it can also be caused by deficiencies due to poor digestion caused by celiac and could be easier to treat.

      Thank you so much for your response  Yes it seems as though things get very painful as time goes on.  I'm not eating gluten as far as I know.  However, I'm not sure of cross contamination.  My system seems to weaken to hidden spices and other possibilities. ???  if cross contamination is possible...I am in a super sensitive mode of celiac disease.. Neuropathy from head to toes

      EXACTLY! I was asked yesterday on my LAST video call with Standford and I stated exactly yes absolutely this is why I need the name! One, get proper care, two, not get worse.Im falling apart, stressed out, in pain and just opened email from Stanford stating I was rude ect.I want that video reviewed by higher ups and see if that women still has a job or not.Im saying this because I've been medically screwed and asking for help because bills don't pay itself. This could be malpratice siit but im not good at finding lawyers
