Gluten Free Bakery - Oh Yummy!

We'd heard of a gluten free bakery in a nearby city, Phoenix, Arizona, called Gluten Free Creations. It's a dedicated gluten free bakery, and I always wanted to try it out except we never get over to this town. Well, I just found out that it takes orders on-line and it SHIPS the food out, woot! It will deliver pretty much anywhere in the Southwest, and to a number of other states as well.

So my daughter's birthday is tomorrow and we ordered some of their gluten free twinkies (winkies). They have a couple ingredients the kids are intolerant to, but not allergic to, so they get to 'be bad' a little.

Their response to the first taste test: these are the best things I've ever had in my life, mom! These are better than the original twinkies were!!

I'm thinking they like 'em, LOL. They did look very good, and moist, and smelled amazing. I can't eat 'em myself because of a few ingredients (darn it!), but if these are an example of this bakery's stuff, it looks good. I have a feeling it's because the FIRST ingredient was eggs! I'm wondering how much that affects the moistness and ability to hold together, you know?

If anyone is in the area and looking for some nice gluten-free bakery goods, this is their website. I haven't tried any of their other products, but the 'winkies' got a definite thumbs up from the under 13 crowd. :D

Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.
