After Drinking A Jones Soda?

I've been gluten free for a week now, 3 hours ago I ate a lot of organic corn cakes, and then a couple of minutes ago I was drinking a Jones Soda when I was overcome with body sores, a fast/loud heartbeat and diarrhea??

I've heard people are sensitive to corn, and sometimes sugar, but how do I know whether I was sensitive to the corn, or something in the Soda? Is it possible that I get those effects immediately while drinking it, like 2 minutes after? Is it more likely that it would be the corn seeing it would have made it to my intestines?

God, this is getting so hard!!! Now it's gluten, milk, and either corn or sugar.... how do you people manage? My family is quite poor and it's really impossible to buy quality, gluten free foods while maintaining fruits and veggies in the house. SIGGH. :(

On the up side I did find some amazing soy free milk free icecream made only of coconut milk, cocoa, and agave nectar. :]

There could be a couple of things going on. First not all sodas are gluten-free, most are but not all. You are also early into the diet. If you made the corncakes yourself were they cooked in pans that had been used for gluten breads? Gluten residue may have been present in the pans or on the utensils you used especially if you use cast iron or wooden utensils. You also mention you ate a lot of them, it may have been to much for your system handle. If you are only a week into the diet you are far from healed yet. Many of us have ups and downs at first. If the corn meal was processed in a plant that also processes wheat flour it also could have been cross contaminated in the factory. Another thing may be that you are reacting to something you ate yesterday or even the day before. As you can see it may be hard at times to really pinpoint what 'got' us, especially in the beginning.

Trial and error, and a lot of research/experimentation, but it gets easier.

I find a lot of processed things marked "organic" but not "gluten free" can be problematic. Normal vegetarians eat a lot of bread and the "healthier" labeling is often designed to appeal to them.

You may be able to handle some lactose free dairy once you are healed up. I can eat a lot of stuff now that I couldn't go near before, once I got rid of the real culprit.

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

      There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.
