Got Flour?

Hey everyone. :)

O.k....I just made a really good pizza crust using some random flours that I had laying around my house from when I went "flour crazy" after I became gluten-free. I know that I'm not the only one who's done this...someone else is reading this and nodding in agreement right now. You know who you are... :P

You are the other non-cooks and cooks out there who now own an assortment of five pounds of soy, tapioca, rice, and garbanzo flour and have no idea what to do with it. Hee hee....I'm coming to the rescue!

Try this eclectic (fairly simple) very YUMMY pizza crust recipe:

1 TB yeast

1/3 C rice flour

1/3 C rice, bean, or soy flour

1/2 C tapioca flour

2 TB dry milk powder

2 tsp x-gum

1/2 tsp salt

1 tsp unflav. gelatin powder

1 tsp Italian spices (oregano, garlic, etc.)

Mix on low

Add:

2/3 C warm water

1/2 tsp sugar or 1/4 tsp honey

1 tsp olive oil

1 tsp apple cider vinegar

Mix on high

Spray pizza pan with cooking oil spray and spread dough. Bake for 10 min. at 425.

Add toppings of choice. Bake again 15 minutes. ENJOY! ;)

Dinner was put together, cooked, served, and dishes cleaned in an hour...not to bad for a special treat! B)

Hope someone can use this! (tip: to spread the dough evenly in the pan...spray a plastic spatula with "Pam"-type cooking spray...this will keep the dough from sticking as you mush and spread the dough into a pizza shape). :P

I'd like to clarify: Is the pain you describe in the area just below your chest constant, or does it only appear when you start moving?

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
