Mata, who suffers from gluten sensitivity herself, cut most wheat out of her diet about 20 years ago. The Natural Food Exchange owner said she noticed symptoms of low energy, foggy brain, irritability and joint pain when she decided to go mostly gluten-free.

“I’ve mostly eliminated it, because I’m not true celiac,” said Mata. “I have one gene for celiac and one gene for gluten sensitivity. You need two genes for full-blown celiac.”

Going gluten free can be expensive for some, however, as the alternative foods tend to cost more than their wheat-filled counterparts. Those diagnosed with celiac disease can get a federal tax deduction on their gluten-free purchases. Getting those deductions requires a bit of painstaking record keeping, however.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
