Mata, who suffers from gluten sensitivity herself, cut most wheat out of her diet about 20 years ago. The Natural Food Exchange owner said she noticed symptoms of low energy, foggy brain, irritability and joint pain when she decided to go mostly gluten-free.

“I’ve mostly eliminated it, because I’m not true celiac,” said Mata. “I have one gene for celiac and one gene for gluten sensitivity. You need two genes for full-blown celiac.”

Going gluten free can be expensive for some, however, as the alternative foods tend to cost more than their wheat-filled counterparts.
