Comfort Gf Food At Last!

Tonight I really had one of the best meals I'd mde in a while. There's a whole lng story behind this, but to make it really short, I made a long-standing comfort food of ours, and totally gluten-free - honey barbeque chicken tenders.

I had some chicken thawed in the fridge. I also just bought a load of my favourite gluten-free/SF/calorie-free honey bbq sauce from our local gluten-free/low carb market. I took some gluten-free "breadcrumbs" (I think it's crushed corn-flakes) and some Bob's gluten-free all purpose flour, and raided the spice rack for anything that struck me. I think I had salt, pepper, oregano, rosemary, basil, a bit of thyme, majoram and parsley. Chopped the chicken up into chunk and coated them nd friend in a bit of olive oil. At he end, tossed it with the bbq sauce. It was fantastic!

All I need now is to be able to duplciate the sauce (just for the natural food appeal) and to clean my chip pan and make homemade chips. :)

that sounds great--happy you found something to enjoy! i had a great homemade lentil soup last night and some chebe garlic cheese bread with italian spices. yum--good meals rock :)

My hubby had a craving the other night for BBQ Chicken Pizza and so I figured I could use Chebe bread mix and make a pizza crust and then top it with BBQ sauce and shredded leftover chicken also coated in bbq sauce and lots of Mozzerella Cheese!! OMG!!! That was the most delicious pizza gluten-free or not that I have ever had!!!!

great idea nisla! hmmmm, i wasn't going to cook dinner tonight, but.....

cool! don't overdo the bbq sauce and make sure you cook the chebe crust 20 minutes BEFORE you add the toppings, then heat until cheese is melted.

      Thanks, Knitty Kitty!  You seem so knowledgeable.  I have followed your other posts.  Actually, I have been supplementing with all of the B complex vitamins, as well as other recommended vitamins and minerals for over 50 years.  My urine is bright yellow after dosing, so I am pretty sure that I am absorbing enough of these supplements to be therapeutic.   When I was still working as a nurse, we used to give high dose thiamine supplements to alcoholics going through withdrawal.  Alcoholism apparently caused a thiamine deficiency.
