  1. I've always used Chebe pizza mix to make pizza's. Before I got a stone I used a regular cookie sheet and while it satisfied my pizza craving it wasn't crispy enough using the cookie sheet, too soft. I got a pizza stone as a Christmas gift and haven't looked back! The Chebe crisps up very nicely you can actually hear the "crunch" as its being cut. I like...
  2. I know its late but with it being so little flour I wonder if you could use corn starch? I use Beth's All Purpose flour (gluten-free pantry) or Pamela's baking mix when I need flour
  3. Have you thought about making some things that your daugther wants but just cutting the reciepe in half? Will she eat leftovers the next day or throughout the rest of the week? I don't have too much trouble with family understanding my Celiacs as my mom has it as well. However, I do understand that some people are leary of gluten-free food and how it will...
  4. Try La Tortilla Factory's tef and millet wraps. They are great, a nice alternative to bread.
  5. I just tried the new Envirokidz cereal and its tasty. If anyone remembers Reese's PB puffs cereal, it tastes like that but less sugary (only 8 grams in Envirokidz). Plus you can help save the Lemurs!! It would make a nice breakfast or snack especially if you have kids. With 8 grams of sugar it seems a lot better than most non celiac friendly cereals. Its...
  6. I was diagnosed by Sophmore year of HS and i'm now in my second year of college. I live on my own but its still pretty tough. I seem to run out of ideas for dinner a lot lol. At first I was going to go to college about 45 min away and live on campus. I tried to get the dining hall to work with me, using the disabilities act,etc but they weren't very helpful...
  7. I've always used the gluten free pantry perfect pie crust, pumpkin pies are in the oven right now. The pamela's cookies sounds interesting, i'd try that one. You may be able to just use flour, some butter, and shortening to make a crust, though I'm not sure how much butter and shoretning you would need to use.
  8. I have no trouble eating out. I go to resturants that I know I can eat at. For example my favorite place is a mexican resturant in my town. I usually get tacos (hard shell) and rice, its really yummy. My mom who also has celiac usually gets fajitas with corn tortillas. We've never had a problem. I also research the resturants online and look at the menu...
  9. I always liked gluten-free Pantry's sandwich bread mix. I use my bread machine and it works fine. It's great when it first comes out. Then I slice it and freeze it. When I want a piece I take it out, microwave it for a few seconds and toast it.

  11. Is it only veggies that he doesn't like? I have a fruit smoothie recipe that I really like. It is very quick and easy to make. It could be a good option for breakfast or an after school snack Ingredients 1 ripe banana, sliced 1/2 cup raspberries 1/4 cup blueberries 1 1/2 teaspoons honey 1/2 cup unsweetened apple juice 1/2 cup ice Directions...
  12. I had trouble going to school until I was diagnosed my sophmore year of high school. It all started in the 8th grade when I started getting sick. I really didn't like going to school not feeling well but my mom pretty much made me go (she didn't think I was really sick). Finally in the summer of 9th grade my GI diagnosed me with IBS (actually Celiac but we...
  13. well its not exactly a recipe but anyway I bought a package of Glutino Plain Bagels and they made me remember those mini pizza bages i used to eat before being diagnosed. So I sliced off a piece of the bagel and toasted it, then put on some mozzarella cheese and a pepperoni and put it under the broiler until the cheese was melted, it was amazing. It is great...
  14. i had a slip up a few months back, my first since being gluten-free for over a year, i was in school and someone passed out little goodie bags. I picked out the obvious treats that i couldn't eat twizzlers, a rice krispy treat, etc. then i came upon a fun size milkway bar. i ate it and within an hour i was sick. i found out from the internet that it had wheat...
