Mtndog replied to souix's topic in Coping with Celiac Disease
Oh Sue- I'm so sorry for all the trouble your hubby and you are having. Was he this sick when he was diagnosed or has he gotten worse? It's common for people with celiac to develop other autoimmune problems like thyroid, diabetes, RA. Why was he given a steroid injection- for the rheumatoid? I wonder if that has contributed to his problems (a bad reaction... -

How about pork? It's not my favorite but husband loves pork chops so I make them often. I always buy organic. You could do a pork loin and have the leftovers for lunch. Also cornish game hen (most grocery stores have it), duck, pheasant and turkey would give you more variety. Ground turkey can provide you with a burger- I wrap mine in lettuce. For a... -

OK- here's some lunch ideas: 1. How about a spinach salad with grilled chicken, apple slices and dried cranberries. Dressing of your choice- maybe just a simple oil and vinegar. 2. many of those make GREAT stir-fry material. Heat up for leftovers. 3. Chicken and asparagus with Italian spices like basil and oregano over Tinkyada penne. 4. Fruit salad... -
ARCHIVED Coworkers Are Not So Understanding
Mtndog replied to virginiagl's topic in Coping with Celiac Disease
I agree. You will get MUCH further with people if you sit them down and explain your situation. Tell them, "Hey, I get sick if I eat anything other than...." More than likely, they will sympathize. You catch a lot more flies with honey than vinegar! -

Also, like gluten, fish IS a major allergen I'm not allergic but I would be hesitant to cook any of the major allergens in a common area having been there myself. -

ARCHIVED Celiac Reaction To Gram Flour And Rice Flour?
Mtndog replied to ojayt's topic in Gluten-Free Foods, Products, Shopping & Medications
I would read the labels on both. Rice flour should just be rice and gram flour (not graham) should be chickpeas but either could be CC'd in a processing facility by other types of flours. If there's nothing on the label, try one and see if it bothers you. If not, try the other. Hopefully you'll be able to figure out which it is.
