The original diet for celiacs was created by Dr. Merrill Haas. He created the specific carbohydrate diet for celiacs and other people with digestive disorders. He determined that celiac's villi are damaged and do not produce enzymes to digest certain grains, sugars, etc. It is unrealistic to think a damaged (villi) small intestine can digest complex foods, such as corn, rice, gluten free grains, etc. Milk intolerance is the first sign there is extensive damage.
Check out the SCDiet on the web. And read the book "Breaking the Vicious Cycle". It may help you heal and feel better.

Gluten is not the only thing that will flatten villi. Many other foods, such as gluten free oats, rice and other grains that are considered ok for celiacs can cause flatten villi. Milk, soy protein, people with crohn's disease, hepatites, parasites, and anything that basically casues diahrrea may result in flatten and damaged villi.
These individuals with damaged villi may no longer produce enzymes to digest these foods. Therefore the foods are "dumped" directly into the blood stream causing havoc with the immune system resulting in all sorts of reactions. Gluten intolerant / celiac - same thing. Both disease wreak havoc on the immune system.
Just reading this forum clearly indicates that.
This is also why the celiac tests are so unclear and so frustrating!

Night sweats and nightmares are symptoms of hypoglycemia, which can be caused by a damaged small intestine. I used to get them all the time. I blamed it on menopause too, but now I blame it on carbs. I'm following the SCDiet. No more night sweats or nightmares or waking up feeling like I need to run for my life!
Check out the SCDiet under food intolerances. It is a gluten-free diet. It has proven successful for many celiacs. And maybe your night sweats will vanish like mine did.

very interesting about your dog. I would spook my horse just by walking up to her. She must have sensed my racing heart. It raced all the time. (Enlarge heart) Now since I'm getting better, she's much more mellow and calm. But then again so am I!
I used to trip over my own feet, couldn't walk a straight line, and would get very dizzy and have motion sickness. That stopped shortly after I went gluten free.
I accidently glutened myself just last week on chicken soup. (Homemade from a gluten injected chicken!!!) I got so sleepy. I was able to finish work, but when I got home I slept in my recliner off and on, and then went to bed and slept another 8 hours! I am on the SCDiet and have no trouble sleeping now. But it wasn't until I found the SCDiet did I get a good nights rest.

This is so sad..... My daughter has struggled for years to conceive and have children. She IS responsible, married has a job and has paid thousands of dollars in medical bills to conceive. She finally was able to conceive and lost the baby. Miscarriage is horrible. The child is loved and lost. Grief is intense.
Life is a blessing. It needs to be cherished and created in love.

Dean's is a brand in the midwest and they offer dry curd cottage cheese. My local grocer gets if for me and I buy 4 at a time and freeze it.

It is possible your blood sugar is diving and the "pounding heart" is from an adrenaline rush which your pancreas releases to bring your blood sugar level up.
It may be due to a damaged small intestine.

Celiac disease damages the intestine. A gluten-free diet often isn't enough to to heal the small intestine. You may want to check out the Specific Carbohydrate Diet -SCD under food tolerances - leaky gut thread.

Yes, yes, yes the diet works for me!
I was gluten free for about two years and still wasn't feeling better. Some days sorta okay, others horrible. I have digestive and endocrine problems. Iron anemia, Pernicious anemia, Hypoglycemia, hepititis, enlarged heart, low blood pressure, osteoporosis,etc. etc. I have researched everything I could find about celiac disease and diet. I found the answer in "Breaking the Vicious Cycle". It explained why a gluten free diet isn't enough.
EVERYONE DIAGNOSED WITH CELIAC SHOULD READ THIS BOOK AND BE EDUCATED ON THE DIGESTIVE ISSUES CELIACS FACE.
I bought a yogurt maker and was scared to death to try the yogurt, expecting to be sick from it, cause I couldn't tolerate any dairy products, but I had no reaction and it tasted soooo good!
The diet is very nutrious and I don't have trouble following it, cause I feel so lousy if I cheat. I have tons of energy now, and I hope and pray my bones are getting stronger. I actually love to cook and love to eat! Before I hated cooking, getting groceries, and food in general.
My advice would be too give the diet a try and don't cheat for at least one week and see if you feel a difference. Maybe we can't be "cured" of celiac disease but we can get better and enjoy a productive active life!
And remember you are only giving up some FOOD! It's only FOOD!

I've been gluten free for two years, but couldn't figure out why I wasn't getting any better. I believe the SCDiet needs to be advertised more on this website. I read alot of things here, but missed the SCDiet. I eliminated all sorts of things, but still wasn't feeling that good. I knew I had a problem with carbs as I had hypoglycemia, but until I bought the book and read it did I discover that it wasn't totally a Pancreas problem, but more of a intestinal problem.
All celiac's should be aware that they may have trouble digesting carbs, which creates a host of problems. Sleep, muscle, brain, eyesight, digestive, and on and on. The book explains it all, and although celiac's can not be "cured" they can be healed and live healthy lives!

Poor carbohydrate digestion causes me to have night mares, night sweats, leg spasms/cramps, tingling and racing heart. I will wake up from an adrenaline rush.
I'm following the Specific carbohydrate diet, which is gluten free. I now sleep fine, but it took time and 2 years of searching for the right diet. Good luck, I hope you find an answer.

I've been on the diet for a couple months now and finally have found the answer to all my symptoms. I purchased the yogurt maker, almond flour, and then revamped my pantry! I am sleeping through the night, have normal BM's, and tons of energy. For the first time in many, many years I feel wonderful!!!
I have been gluten free/dairy free for about 2 years but still struggled. I tried many, many different gluten free bread recipes and different gluten free foods eliminated all sorts of foods and found it just wasn't working for me. Then I came across this link and the SC Diet.
I can now make bread, cookies, bars with almond flour and honey (Yum!). Eat lots of SCD yogurt and now hope that Santa will bring me an ice cream maker for Christmas!
I am also hoping that 2009 will be the year of complete recovery. I hope to find my osteopenia to improve or at least stay the same. I also am hoping to stop the B-12 injections.
Anyone who is struggling with the gluten/free diet should look into the Specific Carbohydrate diet. This should be recommended by ALL celiac Dr's when their patients aren't improving on the gluten free diet.
BUY THE BOOK! Spread the news! There is hope!

THe only coffee I can tolerate is Starbuck's decaf. I use gluten free Coffee mate. I've tried different brands of decaf and have symptoms - (racing heart, dizzieness, exhaustion, upset stomach).
I love my coffee. FYI.

You don't frighten, Ali. You're right. We have an experimental GM corn field nearby - placed directly beside the fields of an organic farmer's!!! My dr. whom I saw today is a spare-time beekeeper and he doesn't laugh at all about these GM fields.
GM crops are sterile, I believe.

My pony's are thinner now, they were on some pretty rich pasture that year. The mare was nursing so didn't want to interrupt anything. They don't get any feed other than grass and grass hay. - Occassionally oats. They are older now and in pretty good shape. (They are smaller - registered quarter horses 14.5 hands.)
Anyway, the yogurt is delicious - with honey. No symptoms at all, but I made a meatloaf that had cheddar cheese in it and I had horrible nightmares and am tired and sluggish. Hypoglycemia again. Is there much lactose in cheddar cheese? I must have zero tolerance for lactose. Will that get better? Or is it broke for life?

THe yogurt is wonderful! I'm able to eat it with no reaction! I'm sticking with the SCD diet.

My book on celiac says shell fish is a problem, crab, lobster and shrimp. I love them all but can't eat any of them anymore. Don't know why, maybe' it's harder to digest.

Make chicken soup from scratch and freeze some. Chicken, carrots, celery, onions. I would stay away from "starchy veggies" since you said you are having trouble with rice. (starch)
Pork chops, fish like orange roughy or walleye or salmon, tuna, turkey, cornish hens, boiled eggs,
Almonds, olives, dill pickles, cooked (steamed) veggies -
I drink almond milk - it's delicious.

My skin was dry, flacky and thin from malabsorbption of fat. I started eating lots more butter, olives, and all kinds of fresh meat with fat and went gluten free - my skin improved dramatically. Also, I had a lot of rashes, ichy patches that went away once I started B-12 shots. (I develped pernicious anemia). You probably need magnesium and other supplements. Sounds like you may not be absorbing much of anything right now.
Your gall bladder could be effected, plus liver. - I've had hepitites and found fresh fruits (apples, pear, peaches) helped me recover. Gluten can cause problems in every organ of the body!

I need some advice on the SCD Diet. I have made the yogurt and started eating it. My symptoms aren't unbearable at this time. (Ringing of the ears, back ache and some gas). Will this get better? Or am I fooling myself thinking I can eat dairy again?
I've been gluten-free and dairy free for about 2 years.
I have a carbohydrate issue - like most here in this forum. I do not get D or C, but have reactive hypoglycemia. I'm following the SCD diet closely.
Thanks for any help or advice anyone has to offer.

If you decide to pull the tooth, I would ask the dentist to put you on antibiotics BEFORE she removes it.

A mettalic taste in your mouth could mean a strep infection in the tooth with the root canal. If you have a salty taste it could mean a staph infection - abcessed tooth.
I had the mettalic taste for some time and found out the tooth with the root canal had failed. I had it removed and got a nasty strep infection that took 3 rounds of antibiotics to get rid of. I was really sick.
During a web search I found the information about the tastes. It was right on.

Hello all;
I HAD reactive hypoglycemia. I was diagnosed through the 6 hour test. I was told to follow the low carb; hi protein diet. It sorta worked, but I struggled with the complex carbohyrates that were recommended. I had all the symptoms you have had.
I did lot of research and read many books, and now no longer have hypoglycemia. I follow the SCDiet closely. The hypoglycemia is part of the "toxic" waste that is produced by undigested foods. Fix the small intestine and hopefully it will fix the hypoglycemia.
Also, I was tested for diabetes and was told I had NO risk of it in my future based on the test. I'm sorry I didn't ask more questions about that test.
The glycemic index may not be the best for celiacs to go by as it doesn't address which foods can be easily digested and which foods take healthy villi producing healthy enzymes to digest properly, which we DON'T have! That is why you can read about all sorts of food intolerances on this forum. Our intestine is damaged and it is unrealistic to think all complex foods can be digested easily.
Hang in there - food may have caused us damaged, but there is good nutritious food that will heal us!
