THANK YOU for this wonderful bread!!!!!
I made one loaf yesterday afternoon and Kaitlyn Grace ate 3 slices, it was so good that I ended up making another loaf last night. I used skim milk and I warmed it in the microwave. It rose very beautifully while baking a good 2-3 inches above my pan and did not deflate after baking. It slices great, no crumbled messes. It was a very easy bread to make.
As a side note I added 1/2 cup of soy flour to the flour mixture and 1 cup of flax seed.
THANK YOU AGAIN

What this the Alton Brown recipe or the Annalise recipe?
It was the Alton Brown one, Kaitlyn Grace was so happy when she watched him make cookies with her flour but was so disappointed in them.

We LOVED this thank you so much for posting this!!! I made 5 batches of muffins and we froze them....they are great!!!!

We made them twice and I thought they were awful and my 3 year old would not touch them. My 13 year old that eats anything took one bite, they were very grainy in texture and had a funky aftertaste.

I don't get a chance to post much or read the board much, but was just wondering if anyone here is in the Dallas/Fort Worth area? We are in North Richland Hills Just wanted to email or chat with people to get the best ideas and places to shop here for things for my 3 year old. We LOVE our GI and have no doctor complaints
(we go to Medical City Dallas)
Please email me if you think you can help me

Amanda - I am new to this format and just checked your profile and saw your other posts. My goodness, the corn + gluten thing must be difficult . What a loser dietician you encountered. And you are saying you have an older child who is extremely special needs as well??? Oh, my. I am sure you are plrenty overhwelmed how is it going.
Have you been able to find any sort of IRL support? I am just wondering what kind of stuff you've been doing for relief. Yourself or your child. I am also a caregiver for several different chronic illnesses. Regular stuff like asthma. But also, my celiac kid has a much much bigger issue, he has a syndrome in which fluid collects on his lungs. Lately he has spent quite abit of time at the hospital, uncomfortable tests, and on top of that Gluten got yanked out of his diet around April 1. So he is feeling a lot like "why me?", and I wonder if and when and how I can compassionately address that. I know there are lots and lots of other sick kids in the world. Any tips on how to help a kid cope?
Thanks - HEIDI
Heidi,
Yep the corn and gluten thing is crazy but doable. We have a private duty nurse 60 hours a week with my son. Kaitlyn Grace also has kidney reflux and GERD and lung problems, so they why us is starting. She asked me yesterday why she is always so sick and can't eat chicken nuggets anymore. I reminded her that she is not as sick as Noah and its only food, we can make our own chicken nuggets and they taste better that way and she could help me. Right now at 3 that suffices. I worry more about when she is older.

Kaitlyn Grace started having problems also, we took her into her pedi because her hair started falling out (on top of the being tired) she was tested and put on an iron supplement, he said she was anemic. We are taking her in again next week to make sure her levels are going up.

Kaitlyn Grace is only 3, but she also has a corn allergy, so she would always ask if something has corn in it, cause corn makes her sick. She is very funny about her corn allergy, she'll even ask her GI if she can try just a bit of corn, cause maybe since she is a big girl it won't make her as sick!! With the celiac, we did the same as the corn. Although she doesn't grasp celiac she does grasp flour, so she knows we make her own cookies and pancakes, and she ask before she can have something.
We also have made our home mostly gluten-free. Our 13 yo does not mind and our 9yo is extremely special needs, so he does not eat orally.
I will agree it is an expense int he begining, but it is a healthy easy way to eat. Making our own cookies and bringing them to play dates has worked, so has using alternatives to cookies, such as fresh fruit and yogurt. We hosted play date last week and did taco salad and it was a hit with the kids!!! No shells but they used lay stacks to scoop it up and loved it!

We went into her pedi yesterday and spent a lot of time talking. Kaitlyn Grace is very anemic, so we started a new vitamin. Again I thank all of you, I tend to go worse case scenario with everything!!! We are going to do this vitamin and after 2 weeks do another iron test, if she is still anemic, he said we should delve further.

Alopecia can definitely be connected to celiac disease. Your daughter has only been gluten free just under 3 weeks, so it would not be surprising if her body is still showing effects of gluten ingestion...and it's also possible that she is still getting gluten from something in her diet, perhaps from cross contamination. Keep up with the gluten free diet, and, as suggested by loraleena talk with your doctor about testing for other health problems such as thyroid, vitamin & mineral levels, and other malabsorption issues.

I was more concerned because it just started to happen, just this past weekend. We use the Suave kids 2 in 1 shampoo and johnsons buddies body wash. We also use burts bees, but I ran out last week. Her hair has never fallen out before, maybe I am being over paranoid!!! Since I am still new to this, what do I look for in the bath products? Would they say contain wheat?

You have all been a wealth of information to me. My 3 year old was diagnosed on 4/5/07 and has been gluten and wheat free since 4/6/07. I went the whole 9 yards, new pots pans, dishes silverware, sippy cups, strainers, toaster,etc... I know she is not being cross contaminated.
This past Saturday, she woke up and had a clump of hair on her pillow, I didn't think too much of it, now every morning she is waking up with clumps on her pillow and as I brush her hair, it falls out. She has spots of baldness. Has anyone else ever experienced this? We are going into the doctor in the morning, just wanted some ideas before I went in if possible.

For pasta we use DeBoles. We love it, my husband said it is better than the whole wheat pasta we use to use. I have used it for mac and cheese and used it with homemade marinara. We have used the elbow macaroni and the pasta spirals.
I used Pamela's Baking mix to make pancakes. I made a batch of silver dollar size and flash froze them then put 4 in a bag. We reheat them for 30 sec in the microwave.
I hope these might help you some.

So its been 2 weeks since we have gotten the Celiac Diagnosis, I think we have adapted very well. I got a new toaster for Kaitlyn Grace's waffles (btw the Vans waffles are awesome!!!) Right now I am still paranoid about her plates, so she is using the zoopals and dora paper ones, which she loves. We have had great success in making cookies, pancakes, brownies and scones with Pamela's Baking Mix. Love that stuff, I bought 6 pkgs at Kroger the other night, we have used it for everything.
Okay now I have a few questions:
1) I have noticed that Kaitlyn Grace is very tired now, she needs a nap and also is sleeping about 11-12 hours a night (and then a 2 hour nap) Is this a sign of concern? Personally I think it is, but not sure if it is a normal phase.
2) Are there any goldfish type crackers out there? That is the one thing Kaitlyn Grace really misses and wants.
3) With the Pamela's mix, what is causing the aftertaste on our cookies and pancakes? Its not a bad taste, just a nutty taste, can I counteract it with anything?
Thank you all so much for your insight and making the gluten free switch easier

Thank you for all the wonderful responses! I really think I just felt so overwhelmed on Friday, relieved to finally have an answer, but then it just seemed like we hit a brick wall!!! I spent the weekend cleaning and getting Kaitlyn Grace her own shelves in the pantry, do I need to change her dishes out? All weekend she's been eating off paper plates
I got her own jar of peanut butter, she LOVES the Van's waffles. I was happy to find some things at Kroger.

Hello, my name is Amanda. My 3 year old daughter, Kaitlyn Grace, was diagnosed Friday with Celiac. We met with a dietitian at the hospital, who offered very little help. She said to use corn tortillas, corn chips etc to help the transition. I pointed out that Kaitlyn Grace is allergic to corn as well, as she said "wow you have some challenges"
Any suggestions? I bought her the blue diamond snack crackers (the pecan ones and the almond ones) Also found frozen mini waffles. I bought Pamela's baking mix, but have no idea what to make with it. Just feeling overwhelmed at the moment!!!

We have to agree that this is THE BEST bread and makes great sandwiches and is VERY easy to make. It also holds well for 3 days (which is the longest a loaf has lasted at our house) It also makes great french toast and grilled cheeses
