I think the gluten is contaminated with bacteria that can make people sick. So I would consider avoiding it for this reason until issue is cleared up. But normally eating plain chicken is fine. I think the gluten has to be broken down in the chickens digestive system before it can enter the tissue. It's the undigested protein that we have a reaction to. I... -

My daughter also had condtipation problems that did not go away until I took her off dairy also. I heard celiac's are often lactose intolerant, at least until completely healed. -

Could just be intro of new foods, but I would definately keep an eye on it. Are the stools particularly foul-smelling? I know poop stinks, but my daughter at 18 months began having dense, very dark stool with what looked like dark sand in it. I also noticed some mucus. Yes! I am still not certain if my hunch is right, but outlook is good. I would recommend getting off the gluten and see what happens. I first learned about Celiac when I was doing a search for my daughters abnormal stool symptoms. She is 2 and had what looked like sand in her stool.
