  1. It took me 3 weeks to start to feel better, but then I still had symptoms, sometimes severe. I originally just thought I was getting glutened, but it turns out I'm casein AND soy intolerant. It took a long time for me to figure out soy as a culprit. My next bet for you would be to eliminate all dairy to see if that helps. You can then reintroduce dairy...
  2. I don't know the technical answer to the question, but if it were me, I'd probably try something with a little bit of soy first, but I'm biased because I want to drink Blue Diamond almost milk. Chocolate soy milk? Good luck! Please let us know how you make out. I want to believe in 6 months I can eat it.
  3. A lot of the commercial chocolate I've seen has soy lechitin in it. Has anybody figured out how to make these -- without butter or margarine? I have coconut oil that could be used in place of shortening, but not sure what to do about the chocolate.
  4. Nope, doesn't taste coconut. Tastes slightly different, a little sweeter, but still delicious. The filling is a little, itty bit too liquid, though, and that's because the normal pumpkin recipe calls for 12 ounces milk, and the coconut was 13.5 ounces and I just threw it in. Whoops! Next time I'll measure it.
  5. Sorry you are nervous -- good luck tonight!!! My mom says she has IBS, but I personally believe it is gluten and dairy intolerance. (She refuses to be tested or to go off gluten to try it. Says there's no way she can give up bread. But that's another story.) ANYhow, I've read that it's rare for celiacs to have IBS, but I'm certainly no expert. After...
  6. I've been having this and some gas. Since going off casein (protein in milk) and soy, it has completely gone away. I'm sorry to have to say it, but you may possibly have some food sensitivities other than gluten.
  7. It can be really hard. I had a tough time sticking to the diet for quite a few months after diagnosis. What happened to me is if I accidentally got glutened, I figured it wouldn't matter if I ate some, and then I'd eat some the next day and it was a spiral. You just gotta make it a few days, and you'll start to feel better. Then you won't crave it so much...
  8. I just made a GFCFSF pumpkin pie. I believe it's also corn-free. Here's the recipe I used: Open Original Shared Link
  9. I think I finally got it down. This was my fourth attempt at making a pie that wouldn't make me sick because I wasn't sure that soy was the culprit. I am so happy! So.... here's how I did it in case any one else needs to make a GFCFSF pumpkin pie. Crust: 1/2 cup tapioca starch 1/2 cup potato starch 3/4 to 1 cup rice flour 1/2 cup coconut oil...
  10. I *hate* eating out. I do it to be with friends and family. Steamed veggies and chicken without soy sauce at a Chinese place sometimes works. Sometimes not.
  11. First sign is "brain fog" -- feeling like I'm floating, not with it, extremely tired Second sign is typically tingling/numbness in my arms and legs at night Finally some trips to the bathroom Gas and bloating Same things if I eat soy or casein, but I don't typically get the tingling/numbness with those. Edited to add: severe insomnia. I had even...
  12. OK, after accidentally eating something with soy this weekend (stupid mistake!) and getting sick, it's so obvious now no soy. My hubby is frustrated because so many of the meals/recipes we had worked on to be gluten-free have soy in them. I've read that if the villi heal, you may be able to eat these other foods again. Has anyone actually ever had that...
  13. I've heard some supposedly gluten-free people say I could eat Rice Krispies. I responded absolutely not -- it has malt in it. Some people are just clueless, or are not dedicated enough to follow the diet. It is *really* hard to begin with. Everyone says that, and I know it's no consolation, but it really will get easier. I don't even crave bread any more...
  14. I've just started to go soy-free, and discovered every dressing in the fridge has soy oil in it. What's up with that? Anyhow, I'm ... um ... incredibly embarrassed to even ask this ... but if you do simple olive oil and vinegar, what type of vinegar do you use? And do you mix it 1:1 with olive oil? Also, does anybody have a soy-free, casein-free recipe...
  15. Re: weddings. We are getting married in February, and we are having the reception at a fire hall to save money. Well, guess what -- they don't put anything on the meat, so that's already gluten-free. The salad will just have croutons on the side, and I will have a box of gluten-free croutons for me, my brother and my aunt. We have a gluten-free cake maker...
  16. I hate to burst your bubble, but working around flour all day doesn't seem ideal. You're breathing and possibly touching it constantly. Maybe there are similar jobs where you wouldn't be around so much flour?
  17. I don't really want a powder. Sounds kind of nasty...
  18. Woah, wait a minute. Diet Mountain Dew lists brominated vegetable oil as an ingredient. Does that mean soy? Pepsi does not list it as an allergen on its Web site.
  19. I have a lot of problems with something like restless leg syndrome, but it affects my arms, too. I have found that alcohol severely aggitates this. Just something else to consider that could possibly help.
  20. I personally don't even see this as a question of gluten versus non-gluten. If you pack his lunch, then you get to put much healthier foods in there.
  21. For those of you who avoid gluten, casein and soy and take calcium supplements, what brand are you using? I checked yesterday, and the calcium/D3 I take has soy in it, and I just bought it recently. I know GNC has calcium/D-3 that is GFCFSF, but my hubby insists GNC waters down the vitamins. I don't know how much I believe that, but I also don't want to...
  22. The rice cakes are a good idea! I love it -- I have missed PBJ.
  23. Yup, that's what I meant. On Sundays I make the deluxe breakfast I used to enjoy on occassion at a restaurant. That includes yummy homemade fried potatoes.
  24. The spaghetti sauce is actually a department store brand -- Wegmans. It just has this most delicious taste that I've never had in a spaghetti sauce. I'm sure I can find some soy-free substitutes, but this one just really stinks because it's soooooooo good. OK, are there any potato chips that are gluten-free, casein-free and soy-free? Lay's has those sunflower...
  25. Just thinking about it now and that also could explain why I sometimes react to potato chips -- fried in soybean oil.
