I was having either grits with ham and eggs, rice cake with almond butter and jelly, or a nut-bar (they are new in the granola bar section, but only nuts) - but i just got back a test from a. l.c.a.t that says i'm medium-reactive to rice (cry) and mildly reactive to almonds and pork. I only have 3 grains i can eat, no dairy except egg yolk, and only meats...

  7. I've made two loaves, and they both fell (and one was focaccia lol). I read another post somewhere that the most common reason is over-rising before baking. I know the focaccia I had overheated the oven where I was rising it, and the loaf directions said rise to top of pan, and it wouldnt, so i kept leaving it - the posters said only let it double, no more...

Also you can buy cheaper rice flour at an asian grocery, if you have one of those around - however, I admit I did a side-by-side comparison of my brown rice flour (shipped from amazon w/ shipping more than product price) and the asian white rice flour - the brown rice flour tasted better and the white rice flour was a little gummier.   9. I'm kinda new to this too, but this is the way I understand it (and i trust someone to correct me if I'm wrong!). The blood work shows that your body is responding incorrectly to gluten. The biopsy shows that its so bad that your stomach is badly damaged by it. The medical definition of celiac is that you have to have the gut damage and the blood response...
