Hi All, I am just wondering whether you experience the same type and intensity of reaction from ingesting barley (as in barley malt) as you do from ingesting wheat, from various sources, including microscopic contamination? Hi Gang, I baked some wheat-free pumpkin muffins for my four year old son on the weekend, and added some No Name pre-packaged Sultana Raisins. I agree that the price of the xanthan gum is too dear to use regularily! I discovered online that guar gum serves the same purpose, replacing the lost stickiness of the missing gluten. And the great news is, it costs about 1/3 of the price of the xanthan gum. You use it by adding one teaspoon guar gum per cup of "flour" used. The finished product holds... -

Hi Karen, I am Canadian too! I live in Ontario. Xantham gum is a powder that you add to your baked goods that makes up for the "lost" stickiness of the "missing" gluten, in the gluten-free flour mixtures. Sometimes I have to unplug the radio in my room because I can hear the soft buzz of the electricity, I think. NO noise is best. I can tolerate the sound of the fan, or of one of my kids breathing beside me. Definitely NO radio or television on for a deep sleep. Amy, I'm just curious how you discovered that Sabastian has celiac at such a young age? Can celiac cause hypothyroidism (or are they somehow inter-related?) Can a person have celiac, and seem to be able to eat some gluten containing foods like bread with no obvious adverse symptoms, but get symptoms (cramps, nausea, diarrhea) from other gluten containing foods like pasta?

My 12 year old son Jesse, has been diagnosed ADHD and is a wonderful, pleasant child to be around........when he is on his medication, which has recently been switched from the 20 mg slow release Ritalin, to the 36 mg Concerta. Mariann, Do you have any website or something to support your comment that "researchers have come to recommend ALL kids with dental enamel defects be screened for Celiac Disease". I would like to run that by our dentist, as upon my youngest daughter's first dental appointment, one of his first comments was how soft her dental enamel is! Thanks.

Lauradawn My nutritionist advised me to use the bean flours in baking for my son, to increase the amount of fibre in his diet as the rice flours tend to be very low in fibre. Also why brown rice flour is recommended over straight white rice flour. Adequate fibre is important in your diet, even if you have celiac disease! Cher2, The strange... -
