  1. I'd venture to guess that 10-20 years from now everything we think about gluten/celiac will look different from today, on the whole. Some of what we "know" now will be part of the picture, some things not. Part of me wonders why do "any" testing if I feel better. In the future it will all be so much more advanced, with fewer false negative and positive results...

Just FYI, I am reading Peter Green's book "Celiac Disease: A Hidden Epidemic", and in it he says you *can* do a biopsy within 6 months of going gluten-free - that it takes 6 mo. to a year for the intestine to heal. He is director of Columbia's Celiac research and treatment center and has focused on this for 15 years. There may be other professional opinions...

  4. I am reading Peter Green's 2006 book "Celiac Disease: A Hidden Epidemic." I was surprised to read he feels you can biopsy w/in first 6 months off gluten, that it takes 6 mo. to 1 yr. for the tissue to heal. Well I'm about 4 mo. to the day and had written off a chance at a biopsy 'til now. I just wonder if others hear conflicting info about this time frame...
  5. Have you tried coconut oil? It's quite powerful at killing unhealthy organisms in the gut, I think sometimes we get rid of food irritants but forget that a lot of gut dysbiosis remains and needs a lot of attention too. Just something else to try.
  6. At least one of the parts of raw milk kefir that helps with elimination is all the enzymes it is loaded with. But you can get live enzymes in your diet from sources other than cultured dairy products.   8. This sounds like me exactly. Here's the thing: raw milk kefir did the trick! It must be raw. Commercial pasteurized kefir did not work for me. Nor pasteurized yogurts.   11. Now almost 3 months gluten and mostly casein free (doing raw milk kiefer), I find I can sometimes eat gluten without any *noticeable8 consequence. My PCOS symptoms are better (regular periods without meds!) but I also get acupuncture now and don't know if it's that. Aren't they about the same as buying gluten-free bread pre-made, if not more?   13. Thanks for this. Since that post I discovered my bloating is significantly caused by yeast. Coconut oil and Enzymemedica's Candiasis is helping the part of the bloating that gluten-free/CF didn't. I did have PCOS symptoms before any yeast problems, but maybe one thing led to another.

  19. I've been gluten-free about 45 days, DF for a couple weeks. I got glutened twice recently at restaurants. Before going gluten-free/DF my symptom was chronic major bloating not responsive to anything. gluten-free helped!   20. Update: from Heinz website FAQ: Where can I find gluten-free products? Heinz Ketchup and Heinz Organic Ketchup do not contain any gluten (the distilled vinegar used is from corn sources). Also, Wine Vinegar, Distilled White Vinegar and Apple Cider Vinegar are gluten-free. Heinz Hot & Spicy Ketchup Kick'rs is gluten-free as well.

  25. Thanks. Is the malabsorption of all nutrients or just certain ones? I am overall very healthy and don't suffer fatigue unless there's an obvious reason.
